Why You’ll Love This Recipe
I could eat Mexican food every single day and it would never get old. If you’re looking for easy chicken fajita recipes, look no further! This is one dinner that I can make and it will be a hit with the kiddos, too. Yay for not having to cook multiple meals!
These low carb chicken fajitas are the easiest, one-pan dish you can make. The homemade Keto fajita mix is a much healthier alternative to the additive-filled packets! This recipe is also perfect for making fajitas for a crowd.
Ingredients for Easy Sheet Pan Keto Fajitas

See the recipe card for full quantities – this is just an overview!
Sheet Pan Chicken Fajitas
- Avocado oil (I like to use this because of the high heat point, but regular olive oil works, too!)
- Red bell pepper
- Orange bell pepper
- Green bell pepper
- Medium onion
- 1.5 lbs chicken breasts
Fajita Seasoning Mix
The best part is the easy homemade paleo fajita seasoning mix! Many of the seasoning packets you find in stores have gluten, MSG, and lots of additives. This is an easy and cost-effective alternative! You can triple the amounts used in this recipe and store the extra seasoning mix for future use. This mixture also makes a great homemade taco seasoning! Here is what you need:
- Cumin
- Chili powder
- Garlic powder
- Paprika
- Oregano
- Salt
- Red pepper flakes
How to Make One Pan Fajitas
Making fajitas in the oven has never been easily. No stovetop splattering or mess to clean up!

Step 1: Preheat your oven to 400 degrees. Slice the peppers, onions, and chicken into thin strips (about ¼-1/2 inch wide). Make sure the chicken pieces are of even thickness to prevent uneven cooking. Put the peppers and chicken strips into a a large bowl and add the avocado oil and spices.

Step 2: Mix it all together and spread it out evenly on a parchment-lined baking sheet. You want to make sure the chicken and peppers are spaced out. When everything is piled on top of each other, they end up steaming instead of baking. Spacing everything out as much as possible is key!

Step 3: Bake for 25-30 minutes until everything is cooked through and beginning to brown.
How To Serve Paleo Fajitas
For gluten free, serve in corn tortillas. For paleo, use grain free tortillas or to make this Whole30 friendly, serve on a salad/in a bowl with cauliflower rice, avocado, salsa, and dairy free ranch! The options are endless when it comes to putting together your own healthy fajita bowl.

I love to use this 15 x 21 inch sheet pan for all of my recipes. It’s big enough so everything is spread out and not overlapping, which gets them nice and crispy!
Yes, this fajita recipe is gluten free, dairy free, and paleo.
Sure can! To freeze, place the chicken, veggie, & spice/oil mixture into a gallon freezer bag. Seal the ziplock bag, squeezing out as much of the air as you can as you do so. The day before you'd like to cook the fajitas, move the bag to the fridge to thaw.

Love this Recipe! Think I can sub chicken for another protein like steak?
Yes! But the cooking time may be about half for steak!
Second time making this! Easy and delicious – a great weeknight meal. This will be on rotation. I love how little clean up and prep work. We love any night with a variety of taco night.
Thanks!!
Was surprised how delicious this was honestly. Never made fajitas using a sheet pan before either. I did marinate the whole mix in the fridge for about 3 hours before baking. Thanks for the great recipe – my husband and I loved it.
Thanks Katy!
This was really good. We try to stay lower carb so I made bowls with cauliflower rice. Its very flavorful, fast and easy with ingredients I always have on hand. This will be going into rotation. Thank you!
Thanks Debbie!
This is a family favorite. We have started serving it on tostadas with refried beans since my oldest is now celiac and doesn’t enjoy the gluten free tortillas. I also tend to cut some jalapeños into strips to add a little extra kick.
Love it – thanks Stephanie!
I made this for our Sunday Night Family dinner with our kids and grandkids. It was so easy and tasty. Everyone liked it and some even wanted the recipe. This will definitely be on our family dinner rotation.
Thank you Robin!
