What Makes This Hamburger Helper Stroganoff Great

Ground Beef Beef Stroganoff is the coziest classic comfort food there is. Putting a gluten free spin on a family favorite can be tricky, but this Hamburger Helper Stroganoff is so rich, creamy, and delicious, that you won’t even tell the difference!

This is one of my favorite easy ground beef recipes. Traditional hamburger helper is made with wheat flour, worcestershire sauce, hydrolyzed corn protein, modified whey, hydrolyzed soy, artificial flavors, and other bioengineered food ingredients. I wanted to create a version made with simple ingredients that could be enjoyed by those of us with dietary restrictions!

My homemade version is packed with gluten free pasta, lean ground beef, mushrooms, onions, and a rich creamy sour cream sauce. Also, this gluten free stroganoff is ready in just 30 minutes and totally freezer-friendly, making it the perfect make-ahead or weeknight meal.

Ingredient Notes

Fresh mushrooms: I prefer to use cremini mushrooms, also known as “Baby Bella”, which are darker, firmer, and more flavorful than other varieties. They hold up quite well in liquid, which is why I prefer them for this recipe.

Ground beef: I prefer to use lean grass-fed ground beef for this recipe. Feel free to use ground turkey instead.

Beef broth: My favorite brand is Kettle & Fire. It’s shelf-stable, packed with collagen, and made with 100% grass-fed beef! You can find it at Thrive Market, Target, or your local grocery store. Use code MWL15 for 15% off on their website! You can also use chicken broth if you don’t have beef broth handy.

Sherry cooking wine: This can be found at most grocery stores and adds great flavor to this hamburger helper stroganoff. However, if you prefer to leave the alcohol out, you can simply omit this and add 1/4 cup more beef broth instead.

Dijon mustard & Coconut aminos: Coconut aminos are a sweeter gluten free alternative to soy sauce. Additionally, if you want to add even more tang to the sauce, feel free to add a little hot sauce!

Jovial Foods Gluten Free Fusilli: This can be found on Thrive Market and in the gluten free section of many grocery stores! If you can’t find this particular brand, any brand or shape of gluten free pasta will work for this beef stroganoff recipe. Their new mafalda pasta is actually shaped just like the original pasta from the hamburger helper box! It tastes like tender egg noodles!

How to Make Homemade Hamburger Helper Beef Stroganoff

Step 1

Melt the ghee or vegan butter in a large deep skillet or pot over medium-high heat.

Step 2

Add in the onions, minced garlic cloves, and mushrooms. Sauté for 3-5 minutes until they begin to soften.

Step 3

Add in the pound of ground beef and cook for 3-5 minutes, breaking it apart with a spoon as it browns.

Step 4

Sprinkle in the thyme and salt and stir.

Step 5

Pour in the sherry cooking wine and stir, scraping up any brown bits from the bottom of the pan.

Step 6

Add in the coconut aminos, dijon mustard, beef stock, and pasta. Stir well and cover. Bring to a boil, then reduce heat and cook for 9-10 minutes. Test your pasta to make sure it’s not getting overcooked! You want it to be al dente, as it will continue to absorb liquid after cooking.

Step 7

Stir in the dollop of sour cream and stir.

Step 8

The sauce will thicken upon standing. Garnish with fresh parsley, serve, and enjoy!

Mary’s Tips & Tricks

Leftovers: Store in an airtight container in the refrigerator for up to 4 days. Cover and reheat in the microwave for 2-3 minutes.

Dairy Free: This recipe perfect for dairy allergies as long as you use dairy free sour cream and vegan butter!

Creamy sauce: If you want the sauce to be a little creamier, simply add a bit more sour cream. I love adding in some parmesan for extra flavor, too.

Use a large skillet: Everything cooks in one pot for this recipe, so I recommend using a deep skillet that is at least 12-inches in size so nothing boils over.

Can I use my Instant Pot to make ground beef stroganoff?

Yes! The Instant Pot is a fabulous way to make this dish. Use the saute feature for the ground beef, onions, and mushrooms. Cook the pasta and remaining ingredients for 4 minutes on high pressure. Quick release the steam, and stir in the sour cream. You’ll have Instant Pot Ground Beef Stroganoff in no time! This is the 6 qt Duo Instant Pot that I have!

Can I freeze hamburger helper stroganoff?

I do not recommend freezing any recipes that use gluten free pasta. The texture changes and it may become gummy or too soft after freezing.

What are some good beef stroganoff sides?

This would be delicious served with some Maple Bacon Brussels Sprouts, Sauteed Delicata Squash, 10-Minute Greek Cucumber Salad, or Prosciutto-wrapped asparagus! Green beans would also be delicious.

Ingredients

  • 2 tbsp ghee, or olive oil or vegan butter for dairy allergies

  • ½ cup dairy free sour cream, feel free to use regular sour cream or plain non-fat Greek yogurt instead!

Instant Pot Instructions

  • Hit the Sauté button and add in the ghee. Add the onions, garlic, and mushrooms and sauté for 3-5 minutes. Add in the ground beef and cook it for 5 minutes while breaking it up with a wooden spoon.
  • Pour in the sherry and deglaze the pot, making sure to scrape up any brown bits on the bottom of the pot.
  • Add the remaining ingredients (except for the sour cream) and stir. Lock the lid and cook on high pressure for 4 minutes. Quick release the steam and stir in the sour cream. Stir on sauté mode for a few minutes while the sauce thickens. Serve and enjoy!
