Putting a healthy spin on a family favorite can be tricky, but this One Pot Dairy Free Beef Stroganoff is so rich, creamy, and delicious, that you won’t even tell the difference! Also, it’s ready in just 30 minutes and totally freezer-friendly, making it the perfect make-ahead or weeknight meal.

Ingredient Notes
- cremini mushrooms: These mushrooms, also known as “Baby Bella”, are darker, firmer, and more flavorful than other varieties. They hold up quite well in liquid, which is why I prefer them for this recipe.
- ground beef: I love getting grass-fed, organic ground beef from Butcher Box!
- beef broth: My favorite brand is Kettle & Fire. It’s shelf-stable, packed with collagen, and made with 100% grass-fed beef! You can find it at Thrive Market, Target, or your local grocery store.
- Jovial Foods Gluten Free Fusilli: This can be found on Thrive Market and in the gluten free section of most grocery stores!

How to Make One Pot Dairy Free Beef Stroganoff
- Melt the ghee in a large deep skillet or pot. Add in the onions, garlic, and mushrooms. Sauté for 3-5 minutes until they begin to soften.
- Add in the ground beef and cook for 3-5 minutes, breaking it apart with a spoon as it browns. Sprinkle in the thyme and salt and stir.
- Pour in the sherry cooking wine and stir, scraping up any brown bits from the bottom of the pan.
- Add in the coconut aminos, dijon mustard, beef broth, and pasta. Stir well and cover. Bring to a boil, then reduce heat and cook for 9-10 minutes. Test your pasta to make sure it’s not getting overcooked!
- Stir in the dairy free sour cream. The sauce will thicken upon standing. Garnish with fresh parsley, serve, and enjoy!

- Ground Beef: use your favorite ground beef alternative such as: Impossible or Beyond Beef. Follow the instructions on the package for cook time.
- Sherry Cooking Wine: Not all brands are Vegan. Be sure to check the label!
- Beef Broth: Ocean’s Halo Vegan No Beef Broth is an option that can be found at Ralphs, Kroger, and other local grocers.
How Do I make Low Carb/ Keto Ground Beef Stroganoff? If you’re living a low carb lifestyle, and want to make Keto Stroganoff, follow these steps to make this recipe work for you!
- Pasta: I love Natural Heaven Hearts of Palm noodles. Only 2 carbs per serving and they’re the closest thing to real pasta I have found. Also, there is no cooking required! Simply add them in at the last step and stir! Tip: Rinse the noodles with cold water and drain before adding them to the dish as this helps them have more of a mild flavor.
Can I Freeze This Recipe? If you want to meal prep, you can make this ahead of time and freeze it in an airtight container for up to 3 months. Thaw overnight in the refrigerator and reheat servings in the microwave for 2-3 minutes.

One Pot Dairy Free Beef Stroganoff
Ingredients
- 2 tbsp ghee, or olive oil or vegan butter
- 1 onion, diced
- 3 cloves minced garlic
- 12 oz cremini mushrooms, sliced
- 1 lb ground beef
- 1 tsp dried thyme
- 1 tsp sea salt, add more to taste
- ¼ cup sherry cooking wine
- 2 tsp coconut aminos
- 2 tsp dijon mustard
- 3.5 cups beef broth
- 12 oz Jovial Foods Gluten Free Fusilli, or gluten free pasta of choice
- ½ cup dairy free sour cream
- fresh chopped parsley, for garnish

Instant Pot Instructions
- Hit the Sauté button and add in the ghee. Add the onions, garlic, and mushrooms and sauté for 3-5 minutes. Add in the ground beef and cook it for 5 minutes while breaking it up with a wooden spoon.
- Pour in the sherry and deglaze the pot, making sure to scrape up any brown bits on the bottom of the pot.
- Add the remaining ingredients (except for the sour cream) and stir. Lock the lid and cook on high pressure for 4 minutes. Quick release the steam and stir in the sour cream. Stir on sauté mode for a few minutes while the sauce thickens. Serve and enjoy!

Absolutely delicious! As a mom of two, I LOVE how fast it was. I even made the sour cream day of and was it still around 45 min total, maybe less. Something the entire family can enjoy – my son preferred more meat while my daughter wanted more pasta.
