Delicata squash: If you’re wondering where to find delicata squash, I am usually able to find this easily at Trader Joe’s in the fall. It is sold at many grocery stores. If you need a good substitute for delicata squash, you can try acorn squash or kabocha squash – just note, you will need to remove the rind from both of those prior to sauteeing!

Salt/spices: Cinnamon and cayenne – omit the cayenne if you don’t like any heat. It’s a very small amount and only adds a touch of spice, however.

Maple syrup: This adds a delicious sweetness and helps to caramelize the squash while it cooks. Make sure to look for 100% pure maple syrup

Butter: Sub vegan butter to make this delicata squash recipe vegan. You can also use ghee if preferred.

  2. Cut the squash in half horizontally and use a spoon to scoop out the seeds.
  3. Cut the ends off each side, then slice each one vertically.
  4. Slice each 1/4 squash into 1/4-1/2″ thick moon-shaped slices.

  • 2 medium delicata squash, about 1/2 lb each
  • 1 tbsp olive oil
  • 2 tbsp butter, or vegan butter for dairy free
  • ½ tsp salt
  • ½ tsp cinnamon
  • 1 tbsp maple syrup
  • ¼ tsp cayenne

  • Cut your squash in half horizontally and use a spoon to scoop out the seeds. Cut the ends of each side, then slice each one vertically. Slice each 1/4 squash into 1/4-1/2" thick moon-shaped slices.
