A quick and fabulous, savory & salty side dish that is sure to be a crowd pleaser! This Lemony Prosciutto-Wrapped Asparagus is Whole30, paleo, and gluten free.

Prosciutto has quickly become one of my favorite meats! I always buy Citterio brand (the large pack at Costco- it stays good forever!) because the only ingredients are pork and salt. Prosciutto-wrapped asparagus has been one of our favorite sides for a long time, so I figured I should probably add this super simple recipe to the blog!

Definitely try to look for prosciutto without any additives. I always look for sugar free and gluten free when I am buying meats (especially cured or processed meats!).

The lemon adds a nice flavor to the salty pork and asparagus – I seriously had to stop myself from eating this entire tray. They are a perfect side dish to accompany any meal. These can also make an awesome appetizer if you are looking for something that’s Whole30 friendly and EASY! Because we all love easy, amiright?!

You can use foil, parchment paper, or a baking mat – your call! I prefer parchment paper. This is the easiest side dish to make – I promise it is fool-proof! It also makes a great breakfast if you’re looking for something to pair with eggs.

Ingredients

  • 16 pieces asparagus, ends trimmed
  • 8 pieces prosciutto
  • 1 lemon
  • olive oil or avocado oil spray

Instructions

  • Preheat oven to 450. Line a baking sheet with foil or parchment paper. Cut all of the prosciutto pieces in half. Wrap one half around each piece of asparagus, tucking the ends underneath to hold in place. Place the wrapped asparagus pieces on the baking sheet, making sure to leave some room in between each piece.
  • Spray the pieces of asparagus with oil (lightly). Cut your lemon in half, and squeeze one half over all of the asparagus. Slice the other half into rounds and place them on top of the asparagus. Bake for 12 mins. Enjoy!
