See the recipe card for full quantities – this is just an overview!

Sheet Pan Chicken Fajitas

  • Avocado oil (I like to use this because of the high heat point, but regular olive oil works, too!)
  • Red bell pepper
  • Orange bell pepper
  • Green bell pepper
  • Medium onion
  • 1.5 lbs chicken breasts

Fajita Seasoning Mix

The best part is the easy homemade paleo fajita seasoning mix! Many of the seasoning packets you find in stores have gluten, MSG, and lots of additives. This is an easy and cost-effective alternative! You can triple the amounts used in this recipe and store the extra seasoning mix for future use. This mixture also makes a great homemade taco seasoning! Here is what you need:

  • Cumin
  • Chili powder
  • Garlic powder
  • Paprika
  • Oregano
  • Salt
  • Red pepper flakes

How to Make One Pan Fajitas

Making fajitas in the oven has never been easily. No stovetop splattering or mess to clean up!

chicken and peppers and onions in a bowl with seasoning

Step 1: Preheat your oven to 400 degrees. Slice the peppers, onions, and chicken into thin strips (about ¼-1/2 inch wide). Make sure the chicken pieces are of even thickness to prevent uneven cooking. Put the peppers and chicken strips into a a large bowl and add the avocado oil and spices.

Step 2: Mix it all together and spread it out evenly on a parchment-lined baking sheet. You want to make sure the chicken and peppers are spaced out. When everything is piled on top of each other, they end up steaming instead of baking. Spacing everything out as much as possible is key!

Step 3: Bake for 25-30 minutes until everything is cooked through and beginning to brown.

How To Serve Paleo Fajitas

For gluten free, serve in corn tortillas. For paleo, use grain free tortillas or to make this Whole30 friendly, serve on a salad/in a bowl with cauliflower rice, avocado, salsa, and dairy free ranch! The options are endless when it comes to putting together your own healthy fajita bowl.

They are! With only 9 grams of carbs per serving, this meal is definitely low carb diet-friendly.

Are fajitas Whole30 compliant?

These are! All of the ingredients used here are Whole30 friendly. Just omit the tortillas!

I love to use this 15 x 21 inch sheet pan for all of my recipes. It’s big enough so everything is spread out and not overlapping, which gets them nice and crispy!

Can you freeze chicken fajitas?

Sure can! To freeze, place the chicken, veggie, & spice/oil mixture into a gallon freezer bag. Seal the ziplock bag, squeezing out as much of the air as you can as you do so. The day before you'd like to cook the fajitas, move the bag to the fridge to thaw.

How many calories in chicken fajitas?

Just 268 calories per serving!

I can’t believe I’ve never made fajitas on a sheet pan. I won’t make them any other way again! This was so delicious and easy! Not spicy at all. In fact I think I’d add more heat next time. I did a salad with spinach, guac and Greek yogurt. I can’t wait for the leftovers tomorrow!

My peppers turn out overcooked, am I baking too long? They are never crispy as you mention.

A favorite meal in our house! Never would have thought to make fajitas in the oven before, but this meal is a lifesaver in a time pinch, especially if you prep it ahead of time.
