Ingredients You'll Need

ingredients for a harvest sheet pan dinner in nesting bowls
  • Chicken sausage: I love using Trader Joe's Unexpected Cheddar chicken sausage here. It's flavorful, cheesy, and pairs perfectly with the maple glaze. Any fully cooked chicken sausage will work. For a dairy-free option use any fully cooked, dairy-free chicken sausage instead of the Unexpected Cheddar variety. The recipe is naturally gluten-free and can be made dairy-free with this simple swap.
  • Delicata squash: Naturally sweet with edible skin, delicata squash roasts beautifully and gets caramelized edges without needing to peel it.
  • Brussels sprouts: They balance the sweetness of the squash and crisp up nicely on the pan.
  • Olive oil: Helps everything roast evenly and adds a touch of richness.
  • Maple syrup: The star ingredient for a subtle sweetness and golden glaze.
  • Spices: A blend of salt, paprika, cinnamon, and cayenne brings warmth, color, and just enough spice to balance the sweetness.

How to Make Sheet Pan Delicata Squash

Step 1: Preheat your oven to 425°F and line a large sheet pan with parchment paper for easy cleanup. Add the sliced chicken sausage, Brussels sprouts, and delicata squash to the pan.

Step 2: Drizzle everything with olive oil and maple syrup, then sprinkle over the salt, paprika, cinnamon, and cayenne.

Step 3: Toss gently to coat everything evenly, spreading the pieces into a single layer so nothing overlaps - this helps the vegetables roast, not steam.

Step 4: Roast for 25-30 minutes, flipping once halfway through, until the sausage is browned and the squash has crispy edges and tender centers.

Recipe Tips

  • To achieve the best roasted texture, give your ingredients plenty of space to avoid soggy vegetables.
  • Use a hot oven (425°F or higher) and avoid over-tossing once roasting begins.
If you'd like even more caramelization, broil the pan for 1-2 minutes at the end.
  • You can also mix up the flavors: try smoked paprika for depth, or add a dash of rosemary for an earthy twist. Either way, you'll get perfectly roasted squash with maple glaze and a cozy, golden finish.

Storage & Reheating Tips

  • Store any leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat in a 400°F oven or air fryer for 5-8 minutes, until warmed through and the edges are crisp again.
  • To freeze, let everything cool completely, then transfer to a freezer-safe bag or container and freeze for up to 2 months. Thaw in the fridge overnight before reheating.
  • For meal prep, you can roast the vegetables ahead of time and add the sausage fresh when reheating to keep the texture ideal.

Recipe FAQs

Do I need to peel delicata squash before roasting?

No! The skin is thin and completely edible once cooked. It softens in the oven and adds great texture and color.

How do I make delicata squash crispy?

Roast at 425°F on a parchment-lined sheet pan with space between pieces. The high heat caramelizes the surface for crisp, golden edges.

Can I make this vegetarian?

Yes! Simply swap the sausage for chickpeas, tofu, or more veggies. The spices and maple syrup still give this vegetarian dinner idea incredible flavor.

Is this recipe gluten-free?

Yes, it's naturally gluten-free and made with whole ingredients that fit into many dietary lifestyles, including gluten-free fall recipes and Whole30 (just skip the maple syrup if needed).

Delicious and so easy. I’ll definitely be making this in repeat as long as the delicate is in season

My family loved this! Super easy prep and cook time spot on. My only issue was finding delicata squash but that’s the reality of living in a seasonal coastal community. I was prepared to substitute acorn squash but my husband was able to find a delicata. Def making this again!
