TABLE OF CONTENTS
Ingredients for Easy Sheet Pan Keto Fajitas
See the recipe card for full quantities – this is just an overview!
- Avocado oil (I like to use this because of the high heat point, but regular olive oil works, too!)
- red bell pepper
- orange bell pepper
- green bell pepper
- medium onion
- 1.5 lbs chicken breasts – I love to get organic chicken breasts from Butcher Box!
The best part is the Easy Homemade Paleo Fajita Seasoning Mix! Many of the seasoning packets you find in stores have gluten, MSG, and lots of additives. This is an easy and cost-effective alternative! You can triple the amounts used in this recipe and store the extra seasoning mix for future use. Here is what you need:
- Cumin
- Chili powder
- Garlic powder
- Paprika
- Oregano
- Salt
- Red pepper flakes
This mixture also makes a great homemade taco seasoning!
How to make One Pan Fajitas:
Making fajitas in the oven has never been easily. No stovetop splattering or mess to clean up!
Preheat your oven to 400 degrees. Slice the peppers, onions, and chicken into thin strips (about 1/4-1/2 inch wide). Make sure the chicken pieces are of even thickness to prevent uneven cooking. This also helps them to crisp up. When everything is piled on top of each other, they end up steaming instead of baking. Spacing everything out as much as possible is key!
Put the peppers and chicken strips into a a large bowl and add the avocado oil and spices. Mix it all together and spread it out evenly on a parchment-lined baking sheet.
Bake for 25-30 minutes until everything is cooked through and beginning to brown.
How To Serve Paleo Fajitas
For gluten free, serve in corn tortillas. For paleo, use grain free tortillas or to make this Whole30 friendly, serve on a salad/in a bowl with cauliflower rice, avocado, salsa, and dairy free ranch! The options are endless when it comes to putting together your own healthy fajita bowl.

I can’t believe I’ve never made fajitas on a sheet pan. I won’t make them any other way again! This was so delicious and easy! Not spicy at all. In fact I think I’d add more heat next time. I did a salad with spinach, guac and Greek yogurt. I can’t wait for the leftovers tomorrow!
My peppers turn out overcooked, am I baking too long? They are never crispy as you mention.
So simple, flavorful and healthy! I was easily able to scale this down to just t a serving for me with leftovers for later in the week. I can’t wait to keep this in my rotation!Â

A favorite meal in our house! Never would have thought to make fajitas in the oven before, but this meal is a lifesaver in a time pinch, especially if you prep it ahead of time. The peppers, onions, and chicken come out perfectly every time, and even the hubby commented that these are the best fajitas I’ve ever made. Thanks for the awesome recipe that my whole family enjoys!
Thanks, Courtney! So glad you enjoyed them!
These were super easy. I subbed a poblano pepper in for one of the bell peppers because it’s what I had on hand and it was so tasty! Definitely adding this into our rotation.Â

This meal was a HUGE win last night. So easy and so tasty! I love how Mary is not afraid of seasoning- I’ve often come across recipes where I’ve needed to up the spice measurements to get enough flavor, but I have never had that problem with Mary’s recipes. This was amazing! And they made for really tasty leftovers. I had mine with a little rice over salad with a touch of sour cream. Obsessed!
So easy, kids love it, good for meal prep and delicious!
