This Easy Instant Pot Unstuffed Cabbage Soup has all of the flavors of stuffed cabbage rolls without any of the effort! A quick, easy, and delicious meal! Paleo and Whole30.

I’ve always been a big fan of stuffed cabbage rolls (otherwise known as Golumpki), but the only thing is, they are a lot of work! I created this soup recipe to include all of the flavors of stuffed cabbage with a fraction of the effort.

My Easy Unstuffed Cabbage Soup recipe only takes 10 minutes to cook in the ever-wonderful Instant Pot after it comes to pressure, and just 20 minutes on the stovetop! The leftovers are amazing, too. This is definitely one of my favorite Whole30 soups- it is nutrient-packed and warms the soul on a chilly day!

Ingredient Notes

ground beef: Ground turkey, chicken, or pork will also work for this recipe!

beef bone broth: I highly recommend getting some Kettle & Fire Beef broth! It can be tough to find Whole30 compliant beef broth, and this is one of the best in my opinion. Code MARY will get you 20% off!

cabbage: I grab a head of green cabbage and chop it up.

marinara sauce: I like Rao’s Homemade brand. It’s delicious and has no added sugar!

Italian seasoning: This is a blend of oregano, thyme, rosemary, basil and sage!

cinnamon: This adds amazing flavor to this soup!

How to Make Unstuffed Cabbage Soup In The Instant Pot

Set Instant Pot to “saute” function and add the ghee. Once melted, add in the ground beef and stir 3-5 minutes until browned and cooked through. Add in garlic and onion and saute for an additional 1-2 minutes.

Hit the “cancel/warm” button and add in the remaining ingredients. Stir well to combine. Set the pot to “manual” high pressure for 10 minutes, then quick release when done. Stir well and add more salt/pepper to taste. Enjoy!

Mary’s Tips, & Tricks

Instant Pot Valve Release: For this recipe, I prefer to do the quick release. You can use the natural release, but just know the cabbage will get pretty soft the longer you let it sit!

Regular rice: If you prefer, you can use Β½ cup uncooked white rice instead of cauliflower rice. Add it in with the rest of the ingredients before simmering or locking the Instant Pot lid.

Extra veggies: Feel free to add in 1 cup cooked carrots when you saute the onion to add in more veggies!

Toppings: I like to add fresh parsley at the end, but if you tolerate dairy, parmesan is delicious, too!

Can I freeze this cabbage roll soup?

Yes! This recipe can be frozen. Let it cool before transferring to a freezer-friendly airtight container and leave some room at the top in case it expands! It will last in the freezer for up to 3 months. Thaw in the refrigerator overnight, then heat up on the stove.

Do I really need an Instant Pot?

In my opinion the Instant Pot is a great tool to have in your kitchen. However, you can also make this on the stovetop if you don’t have an Instant Pot. The pressure cooking function brings delicious recipes to life in a matter of minutes! The 6 qt Instant Pot has always been a good size for my recipes and family of 5.

Easy Instant Pot Unstuffed Cabbage Soup

Ingredients 

  • 1 tbsp ghee , or olive oil or butter
  • Β½ onion, diced
  • 3 cloves minced garlic
  • 1 lb ground beef
  • 3 cups green cabbage, chopped
  • 24 oz marinara sauce, I like Rao's Homemade brand
  • 2 cups frozen cauliflower rice , (holds up better than fresh, but if you need to use it you can!) – Feel free to sub Β½ cup uncooked white rice.
  • 4 cups beef broth, I like Kettle & Fire brand
  • 1 tsp salt, + more to taste
  • 1 tbsp italian seasoning
  • 2 tsp Coconut Aminos
  • 1 tsp red pepper flakes
  • Β½ tsp cinnamon

Instructions 

Stovetop

  • In a large dutch oven or pot, melt the butter or ghee over medium high heat. Add in the ground beef and stir 3-5 minutes until browned and cooked through. Add in the garlic and onion and saute for an additional 2-3 minutes.
  • Add in the remaining ingredients and bring to a boil over medium high heat. Reduce heat to medium and simmer for 15-20 minutes or until cabbage is tender and rice is cooked through (if using regular rice).

Instant Pot

  • Set your Instant Pot to "saute" function and add the ghee. Once melted, add in the ground beef and stir 3-5 minutes until browned and cooked through. Add in garlic and onion and saute for an additional 1-2 minutes.
  • Hit the "cancel/warm" button and add in the remaining ingredients. Stir well to combine. Set the pot to "manual" high pressure for 10 minutes, then quick release when done. You can let it slow release, but just know the cabbage will get pretty soft the longer you let it sit! Stir well and add more salt/pepper to taste. Enjoy!

Notes

Feel free to use Β½ cup regular white rice (uncooked) instead of cauliflower rice. Add it at the same time and simmer until cooked through. It will be the same instructions for the Instant Pot – just add with the remaining ingredients and pressure cook.Β

    It’s kind of hard to get excited about cabbage, so I was totally shocked with how much I loved this recipe! It went over great with the whole family as well, including young children. This soup is so hearty, nourishing and just so homey! Cabbage is so affordable as is marinara sauce. We can our own from our garden veggies and make our own sausage and broth from the livestock we raise, so this dinner was literally pennies to feed all five of us. It will be a repeat for sure!

    This is full of flavour and super easy! It’s surprising hearty without being overly heavy. I doubled the recipe and topped it with leftover bacon bits because I had them. I also was a little hesitant with the cinnamon but it really adds depth to the recipe. Thanks again!!
