Easy Instant Pot Unstuffed Cabbage Soup

- 1 tbsp ghee or olive oil or butter
- ½ onion diced
- 3 cloves minced garlic
- 1 lb ground beef
- 3 cups green cabbage chopped
- 24 oz marinara sauce I like Rao's Homemade brand
- 2 cups frozen cauliflower rice (holds up better than fresh, but if you need to use it you can!) - Feel free to sub ½ cup uncooked white rice.
- 4 cups beef broth I like Kettle & Fire brand
- 1 tsp salt + more to taste
- 1 tbsp italian seasoning
- 2 tsp Coconut Aminos
- 1 tsp red pepper flakes
- ½ tsp cinnamon
Stovetop
In a large dutch oven or pot, melt the butter or ghee over medium high heat. Add in the ground beef and stir 3-5 minutes until browned and cooked through. Add in the garlic and onion and saute for an additional 2-3 minutes.
Add in the remaining ingredients and bring to a boil over medium high heat. Reduce heat to medium and simmer for 15-20 minutes or until cabbage is tender and rice is cooked through (if using regular rice).
Instant Pot
Set your Instant Pot to "saute" function and add the ghee. Once melted, add in the ground beef and stir 3-5 minutes until browned and cooked through. Add in garlic and onion and saute for an additional 1-2 minutes.
Hit the "cancel/warm" button and add in the remaining ingredients. Stir well to combine. Set the pot to "manual" high pressure for 10 minutes, then quick release when done. You can let it slow release, but just know the cabbage will get pretty soft the longer you let it sit! Stir well and add more salt/pepper to taste. Enjoy!
This recipe can be frozen. Let it cool before transferring to a freezer-friendly container and leave some room at the top in case it expands!
Feel free to use ½ cup regular white rice (uncooked) instead of cauliflower rice. Add it at the same time and simmer until cooked through. It will be the same instructions for the Instant Pot - just add with the remaining ingredients and pressure cook.
Feel free to add in 1 cup cooked carrots when you saute the onion to add in more veggies!
