What Makes this Pomegranate Guacamole Great?

Avocados have a ton of “good” fat in them. They are healthy, tasty, and super versatile. One of my favorite ways to enjoy avocados is to mash them up with citrus and spices and make “guacamole”. What’s also really fun is to add in mango or pineapple for a fruity flair. Naturally gluten-free and dairy-free, healthy guacamole is just the perfect snack for everyone.

Today, I decided to try my hand at adding pomegranate arils, and it turned out incredible! This pomegranate guacamole is the perfect dip, topping, and appetizer. You can put this healthy guacamole on just about everything, and it will taste amazing. The best part? It’s EASY! Ready in just 10 minutes.

How to Make Guacamole

Simple, Healthy Ingredients

  • Avocados: see tips below on how to pick your avocados!
  • Red Onion
  • Pomegranate Arils (aka seeds)
  • Fresh Squeezed Lime Juice
  • Jalapeño
  • Fresh Cilantro
  • Sea Salt, Garlic Powder, and Cumin

Step-by-Step Instructions

  1. Add all of the ingredients to a bowl, reserving 1/3 cup of pomegranates. Mash the avocado and mix everything together well.
  2. Top with the reserved pomegranates and extra cilantro, if desired.
  3. Serve with tortilla chips of choice! I love Siete brand. This is also delicious on chicken & seafood.

How to Pick a Good Avocado

You might not be an expert at picking avocados, and I totally get it! It’s a tricky process, and can either end up being too ripe or not ripe in time for your recipe! Follow these simple tricks to make sure your avocados are the very best for your pomegranate guacamole!

First, it’s important to know when you want to use your avocados. This step is crucial. If you want to make guacamole tonight, you must make sure to pick ripe avocados. However, if you want to make your guac in three days, it’s best to find some that are a bit more firm.

Ripe Avocados: Ripe avocados will yield to pressure, and you will be able to feel that the meat inside squishes a bit. If when you press on the avocado it’s a solid rock and does not give at all, it is not ripe. Think about picking an avocado the way you would pick a peach.

Hard Avocados: If you pick up an avocado and it is firm with no give, it is not ripe. This is perfect if you have a recipe you want to make a few days later.

The Ripening Process

  1. Speed up the ripening process: put your avocados in a brown paper bag, roll it up, and put it in a dark cabinet that stays dry. Check them every 24 hours for the perfect texture!
  2. Slow down the ripening process: stick your avocados in the refrigerator. This will give you an extra couple of days.
  3. If you just want to use your avocados when they ripen on their own, leave them on the counter and check them every day to see what they’re up to!

FAQs

Can I freeze this guacamole? Unfortunately, guacamole does not freeze well. I recommend saving leftovers in an airtight container in the fridge for no more than a day, and stir it before serving!

How do I keep my pomegranate guacamole from turning brown? The citrus from the lime helps, but another trick is to leave the seed from the avocado in the middle of your guacamole while it’s out. This might be an “old wives tale”, but I feel like it works! It is inevitable that your guacamole will brown a bit, but do a stir to keep that beautiful green color bright and shiny!
