I recently shared this Strawberry Cucumber Mojito Mocktail that features the sweet, crisp, and cool flavors of warmer weather. With blueberry season quickly approaching, I set out to make a blueberry version, and I am so happy with the result! 

Featuring a sweet homemade blueberry simple syrup, fresh lemon citrus, and seltzer water, making a crisp, bright, and hydrating drink that hits the spot! It’s a quick and easy recipe to throw together for a gathering, large or small.

Lemon Blueberry Mocktail

  • Ice cubes
  • freshly squeezed lemon juice
  • blueberry simple syrup: See my easy homemade recipe below!
  • lemon or lime sparkling water: If you don’t prefer the extra citrus flavor, you can use regular seltzer, soda water, or even club soda. 

Blueberry Simple Syrup 

  • granulated sugar– You can use coconut sugar instead, but please note that it will be more brown and won’t have the same bright purple appearance!
  • water
  • blueberries: I used fresh blueberries for this recipe, but if you only have frozen blueberries on hand, they will work too! 

Step-by-Step instructions

  1. First, make the blueberry simple syrup recipe. Combine the coconut sugar, water, and blueberries in a small saucepan. Bring the mixture to a boil, then lower the heat and let it simmer for about 10 minutes until thickened.
  2. Strain the berry liquid into a bowl, leaving the blueberries behind. Press down on the blueberries using a spoon to get as much of the juice out of them as you can. You can use a fine mesh strainer if preferred. 
  3. Pour the syrup into a mason jar and let it cool. You can save any extra in the fridge for more mocktails (it makes enough for about 6 drinks). 
  4. Next, add some ice to a cocktail shaker along with 2 oz fresh squeezed lemon juice and 2 oz blueberry syrup. Shake for 30 seconds. 
  5. Fill a glass with ice, then pour the lemon-blueberry mixture into the cup. Fill it up the rest of the way with lemon or lime sparkling water. Garnish with more blueberries and a slice of lemon. Enjoy!

Variations

Blueberry Cocktail

  • This mocktail does not contain alcohol. You can add it if you want or keep it out.
  • To make this into a blueberry vodka cocktail, add 2 oz vodka into the cocktail shaker with the lemon juice and blueberry syrup. Shake, then pour into a glass and fill to the top with sparkling water. 
  • For a blueberry gin cocktail, swap out the 2 oz of vodka for gin. 

Blueberry Lime Mocktail

  • If you prefer lime over lemon, swap the lemon juice for fresh lime juice and use lime seltzer. Garnish with fresh lime slices and blueberries.
