This Paleo Pina Colada recipe uses 3 simple ingredients, and it is dairy free, gluten free, and naturally sweetened! The perfect summer cocktail (or mocktail) for sipping poolside or at your next BBQ. 

Paleo Pina Colada

I am a sucker for a delicious frozen cocktail! Most of the pre-made mixes for frozen drinks are loaded with sugar and additives. This homemade Pina colada recipe uses simple ingredients that you probably already have in your pantry! It tastes just like the real thing. You can also omit the alcohol and drink it as a mocktail, which is also Whole30 friendly!

What Ingredients Do I Need for this Paleo Pina Colada?

Rum: Look for clear, unflavored rum. Bacardi Silver is my favorite!

Coconut milk: Look for full-fat. My favorite brands are Thai Kitchen Organic, Wegman’s, and Native Forest. You’ll want to stir or mix it before measuring to combine the parts that separated in the can.

Pineapple: You can use fresh (best) or canned (drained)!

Optional: The pineapple naturally sweetens this cocktail, but if you like things REALLY sweet, add some honey syrup! Simply combine equal parts honey and water in a saucepan and heat for 2-3 mins while stirring until the honey dissolves. Add 1 tsp to each drink.

Ok… short and sweet, but I wanted to make sure I got this up in time for the holiday weekend!

Equipment

Ingredients 

  • 1.5 cups fresh pineapple, cut into chunks, can also use canned/drained or frozen
  • 1 cup full fat coconut milk, stirred before measuring
  • 1 cup ice
  • 4 oz rum, I like Bacardi silver

Instructions 

  • Add ingredients to a blender in order given.
  • Blend until smooth.

    Bicardi silver is a malt drink in cognito… Not gluten free. Other than that, this sounds like a great recipe!
