This Creamy Cashew Pumpkin Spice Latte is a delicious blend of cashews, coffee, organic pumpkin puree, pumpkin pie spice, and collagen. The perfect healthier fall beverage!

I’m pretty much as basic as it gets when it comes to a lot of things. Pumpkin Spice Lattes on (or before) September 1st included! I don’t order the traditional version from Starbucks anymore because 1) who knows what the heck is actually in the PSL syrup and 2) it’s just way too sweet for me! A little sweetness goes a long way for me these days. I’ve made a few different versions of pumpkin spice lattes using dairy free milk, but I think Creamy Cashew Pumpkin Spice Latte takes the cake. It’s just so darn delicious (and filling).

Why cashews?

You can make SO many different things using cashews because of their creamy texture when blended. They are probably my favorite nut out of all of them (pecans are a close second!), just because they have so many uses. I tried blending cashews into my coffee earlier this year, and it seriously makes the creamiest coffee you will ever have. It also eliminates the need for using any dairy free milk (and also the gums and thickeners/additives that come along with them – unless you’re using homemade, of course). So, I figured why not throw some into a pumpkin spice latte? And it turns out amazing!!

It’s important to use raw, unsalted cashews for this recipe. I like to get them fairly cheap at Trader Joe’s, or you can also find them on Amazon.

In terms of other ingredients, I like this brand of organic pumpkin puree, and I also only use Pumpkin Pie Spice from Primal Palate. It’s so important to have organic, quality spices! For the collagen, I love Vital Proteins Collagen Peptides. They are optional for this recipe, but they are great for gut health, hair, skin, and nails! Maple syrup is optional to give this latte a little sweetness (if you are not doing a Whole30).

Creamy Cashew Pumpkin Spice Latte {Whole30, Vegan}

Ingredients

  • 1.5 cups freshly brewed strong coffee
  • ¼ cup raw unsalted cashews
  • ¼ cup organic pumpkin puree
  • 1 tbsp collagen peptides, optional
  • ½ tsp pumpkin pie spice
  • 2 tbsp coconut cream or coconut whipped cream, for topping - optional! This is the hardened white part at the top of a can of full fat coconut milk.
  • cinnamon stick, for garnish
  • 1 tbsp maple syrup, more or less depending on how sweet you like it- omit for Whole30

  • Add coffee, cashews, pumpkin puree, pumpkin pie spice, collagen, and maple syrup (if using - omit for Whole30) to a high-powered blender (I use a Vitamix). Blend on high for at least one minute or until extremely creamy. Pour into a mug and top with coconut cream, additional pumpkin pie spice, and cinnamon stick (if desired). Enjoy!

Notes

*If only using 1 (vs 1.5) cups of coffee, reduce cashews to 2.5 tablespoons! Otherwise it will be too thick.
