Cottage cheese is having a moment right now, and for good reason. With its high-protein, low-fat profile and incredible versatility, it’s the perfect addition to so many meals.
In this bowl, cottage cheese adds that creamy texture and extra protein boost we all crave. Ingredients You’ll Need

- Sweet Potatoes - Roasted in the air fryer until crispy and caramelized. Adds a sweet, hearty base to contrast the tangy cottage cheese.
- Avocado Oil Spray - Helps the sweet potatoes crisp up without excess fat.
- Grass-Fed Ground Beef - I used lean ground beef, but ground turkey or ground chicken also work well. You want something flavorful that won't overpower the bowl.
- Cottage Cheese (2%) - Look for low-fat cottage cheese with a creamy texture. If you’re worried about clumps, you can blend it for a smoother consistency.
- Avocado - Creamy, rich, and adds healthy fats.
- Taco Seasoning - I used my favorite Siete Taco Seasoning, but feel free to use homemade or another clean-label version.
- Hot Honey - Adds just the right kick of sweetness and heat. I love using Mike's Hot Honey.
- Crushed Red Pepper - Optional, for added heat.
- Salt, Paprika, Chili Powder, Garlic Powder, Onion Powder - These season the meat and veggies to bring out bold, taco-inspired flavor.
How to Make This Cottage Cheese Taco Bowl

Step 1: Dice the sweet potatoes and toss them with avocado oil spray, salt, paprika, and garlic powder. Air fry at 400°F for 18 minutes, shaking halfway through.

Step 2: Brown the ground beef in a large skillet over medium heat with salt, paprika, chili powder, garlic powder, and onion powder.

Step 3: Cook for 5-7 minutes until no longer pink.

Step 4: In a bowl, layer 1 cup of roasted sweet potatoes, 4 oz of taco meat, ⅓ sliced avocado, and ½ cup of cottage cheese. Top with crushed red pepper and a drizzle of hot honey. Add any additional toppings you like-fresh cilantro, diced red onion, pico de Gallo, shredded cheese, or crushed tortilla chips.

Recipe FAQs
Season it! Mix in a little taco seasoning or lime juice to complement the other flavors in the bowl.
Totally up to you. The cottage cheese is usually cold, but the warm sweet potatoes and beef create a nice temperature contrast. You can also blend and warm the cottage cheese for a queso-like texture.
Drain any excess liquid from the cottage cheese and store toppings separately if meal prepping.
Yes! Swap the ground beef for black beans, plant-based beef crumbles, or grilled veggies. It's still high protein thanks to the cottage cheese.
You can use the toppings I recommend or customize with your own. Fresh veggies, shredded cheese, red onion, pico de Gallo, tortilla chips, fresh cilantro, and a squeeze of lime juice work well.
