Coconut Cilantro Lime Cauliflower Rice (Whole30)
This Coconut Cilantro Lime Cauliflower Rice is my favorite way to eat cauliflower! It tastes so fresh and pairs perfectly with grilled chicken, steak, or seafood. It’s also gluten free, paleo, and Whole30 friendly! I’ve included a recipe for regular rice, as well.
Coconut Cilantro Lime anything is my love language! I used to actually hate cilantro (I thought it tasted like soap LOL), but now I love it. Funny how our tastes can change over time! This Coconut Cilantro Lime Cauliflower Rice & Regular Rice are one of my favorite sides. We usually switch it up…if I am looking to keep things lower carb and Whole30 we use caulirice, and sometimes I like the real thing.
Either way, both of these pair so well with my Whole30 Chicken Tikka Masala, Whole30 Coconut Thai Turkey Meatballs, Beef & Pineapple Kabobs, and Lemon Dill Grilled Shrimp among many others!
What Ingredients Do I need to Make this Coconut Cilantro Lime Cauliflower Rice?
- Cauliflower Rice – I like to get the pack of 5 – 16 oz frozen bags at Costco!
- Regular Rice (If using) – You can use regular white rice, jasmine rice, basmati, etc.
- Coconut Milk – It’s important to use full fat coconut milk. I like to use Thai Kitchen brand.
- Cilantro
- Limes
That’s it! Super simple. I like to double the recipe to make enough for my family of 5.

Enjoy! xo

This is so tasty and very quick and easy to make!!! I made the cauliflower rice version and my husband who isn’t really a fan of any rice had 2 helpings and mentioned several times how good it was. Thank you for another great, healthy recipe!!
I make this at least once a week, it is delicious and so versatile! I always make with Mary’s salsa verde chicken and Thai Curry Meatballs! It is also great with grilled fish in the summer. It is a quick and easy staple that makes going Whole30 so easy!
Thank you Megan! Glad you love it!
This is a delicious way to jazz up boring cauliflower rice! My family really enjoyed this with veggie curry. Thank you!
YUM! I best that was a great combo. Thanks Brittney!
This was so delicious! I wasn’t able to get fresh cilantro in my instacart order so I used dried (1/2tbsp). My rice also absorbed the coconut milk in about six minutes, so I stirred and let it steam for eight minutes. Turned out perfect. My husband was so impressed! Thanks Mary for another winning recipe 🙂
Glad to hear that, Erin! Thank you!
I have a can of coconut cream not milk and want to make this using regular rice. Is that possible.? Would there need to be an alteration of any kind in order to do this? I have teriyaki/pineapple chicken in the crockpot right now and this rice would be an amazing compliment to it.
Thank you!
Hi Cara – sorry for the delay here! I hope it’s not too late. But you would just need to do 1/2 the can of coconut cream plus 1 cup of water instead.
Made the cauli rice version with Kevin’s Thai chicken and I literally licked the plate clean.
Such a great combo! Glad you enjoyed it, Gen!
