  • Shredded cheese: Melts into the egg bites for a classic cheeseburger flavor. Good options include American cheese, Colby Jack, pepper jack, or mozzarella. I used the Organic Valley 3 Cheese Mexican Blend.

How to Make These Cheeseburger Egg Bites

Step 1: Preheat the oven to 375. Lightly spray a 12-cup non-stick muffin pan with avocado oil or nonstick cooking spray. Heat the oil in a large skillet over medium heat. Add the ground beef, onions, and seasoning. Sauté for 5-7 minutes, breaking up the meat as it cooks, until the beef is browned and the onions are softened. Drain any fat and set aside.

Step 2: To a blender, add the 8 eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend on high until very smooth and you can’t see the cottage cheese curds anymore.

Step 3: Add 1-2 tbsp of the ground beef mixture into each muffin cup. You should have about ¼ cup of ground beef leftover after dividing it equally among the cups.

Step 6: Bake for 17-18 minutes, until the tops are set and lightly golden brown. Sprinkle the tops of each cup with diced green onions, if desired. Let them cool for 5-10 minutes and enjoy!

Ingredients 

Ground beef/onions:

  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • ½ cup onion, finely diced
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder

Remaining ingredients:

  • 8 eggs
  • ¾ cup 2% cottage cheese
  • ¾ tsp salt
  • ¼ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup finely shredded cheese of choice, I used the Organic Valley shredded 3 Cheese Mexican blend

Instructions 

  • Preheat oven to 375. Lightly spray a 12-cup non-stick muffin pan with avocado oil. 
  • Heat the oil in a skillet over medium high heat. Add the ground beef, onions, and seasoning. Saute for 5-7 minutes, breaking up with a wooden spoon as it cooks. Drain any fat and set aside.
  • To a blender, add the 8 eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend on high until very smooth and you can't see the cottage cheese curds anymore.

    So easy and filling! I could not find my muffin pan anywhere, so I made as a casserole and just divided up into equal servings so they were easy to grab and go. My son, who is not the biggest egg lover, really enjoyed these!

    My two teenage boys ate 3 at a time, i think i will double or triple this next time. Also we are dairy free and left off the cheese topping and i used a mix of Kite Hill dairy free cream cheese and Culina yogurt in the egg mixture b/c that was what i had (only small amount left of each therefore i combined) They will definitely be on repeat in my house for a quick breakfast or snack!
