Cheeseburger Egg Bites Recipe

These cheeseburger egg bites have all the bold, savory flavors of a classic burger, from seasoned ground beef to melty cheese, but in a fluffy, grab-and-go bite. Whether you're looking for an easy recipe, a quick snack, or a high-protein meal on the run, this one has you covered.

Ingredients

Ground beef/onions:

  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • ½ cup onion finely diced
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

Remaining ingredients:

  • 8 eggs
  • ¾ cup 2% cottage cheese
  • ¾ tsp salt
  • ¼ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup finely shredded cheese of choice I used the Organic Valley shredded 3 Cheese Mexican blend

Instructions

  • Preheat oven to 375. Lightly spray a 12-cup non-stick muffin pan with avocado oil. 
  • Heat the oil in a skillet over medium high heat. Add the ground beef, onions, and seasoning. Saute for 5-7 minutes, breaking up with a wooden spoon as it cooks. Drain any fat and set aside.
  • To a blender, add the 8 eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend on high until very smooth and you can't see the cottage cheese curds anymore. 
  • Add 1-2 tbsp of the ground beef mixture into each muffin cup. You should have about ¼ cup of ground beef leftover after dividing it equally among the cups. 
  • Sprinkle an even amount of cheese (about 1 tbsp) into each cup on top of the beef.
  • Then fill each cup just to the top with the egg mixture.
  • Bake for 17-18 minutes or until the tops are set. Sprinkle with diced green onions, if desired. Let them cool for 5-10 minutes and enjoy!

Notes

  • Add toppings – For even more burger flavor, try topping with diced pickles, a drizzle of mustard, or a dollop of sugar-free ketchup.

  • Make them bacon cheeseburger egg bites – Add some small pieces of crumbled bacon to the beef mixture before baking.
