Cheeseburger Egg Bites Recipe

These cheeseburger egg bites have all the bold, savory flavors of a classic burger, from seasoned ground beef to melty cheese, but in a fluffy, grab-and-go bite. Ground beef/onions:
- 1 tbsp olive oil
- 1 lb lean ground beef
- ½ cup onion finely diced
- ½ tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- ½ tsp onion powder
Remaining ingredients:
- 8 eggs
- ¾ cup 2% cottage cheese
- ¾ tsp salt
- ¼ tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup finely shredded cheese of choice I used the Organic Valley shredded 3 Cheese Mexican blend
Preheat oven to 375. Lightly spray a 12-cup non-stick muffin pan with avocado oil.
Heat the oil in a skillet over medium high heat. Add the ground beef, onions, and seasoning. Saute for 5-7 minutes, breaking up with a wooden spoon as it cooks. Drain any fat and set aside.
To a blender, add the 8 eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend on high until very smooth and you can't see the cottage cheese curds anymore.
Add 1-2 tbsp of the ground beef mixture into each muffin cup. You should have about ¼ cup of ground beef leftover after dividing it equally among the cups.
Sprinkle an even amount of cheese (about 1 tbsp) into each cup on top of the beef.
Then fill each cup just to the top with the egg mixture.
Bake for 17-18 minutes or until the tops are set. Sprinkle with diced green onions, if desired. Let them cool for 5-10 minutes and enjoy!
