  • Ground beef: I like 90/10 for less grease, but ground turkey works, too. My shredded taco beef is another great option for taco night.
  • Gluten-free tortillas: Mission and Siete both make great soft tortillas that hold up well.
  • American cheese slices: For that authentic Big Mac flavor. A dairy-free option works if needed.
  • White onion, pickles, and shredded lettuce: Classic Big Mac taco toppings that give crunch and tang.
  • Garlic powder, salt, and pepper: Simple seasoning to boost the flavor of the beef.
  • Big Mac sauce: My lightened-up copycat Big Mac sauce recipe is made with Greek yogurt, mustard, ketchup, relish, coconut aminos, paprika, and salt. It's creamy, tangy, and ties everything together.

How To Make Big Mac Tacos

These gluten-free Big Mac tacos couldn't be easier:

Step 1: In a small bowl, combine your Big Mac sauce ingredients – Greek yogurt (or mayo), ketchup, mustard, relish, coconut aminos, paprika, and salt.

Step 2: Mix well to combine. Chill until ready to serve.

Step 3: Divide the beef into 6 portions, roll into balls, and press each ball onto the center of a tortilla.

Step 4: Rather than smashing the tortillas and meat down onto the pan using a burger press, I’ve found that this method works better: Spread the raw meat out in a thin layer on the tortilla and sprinkle it with salt, pepper, and garlic powder. This forms better and more evenly-cooked burger patties.

Step 5: Heat a cast iron skillet or griddle over medium-high heat. Place the tortilla meat-side down on the hot griddle or pan, and cook for 2-3 minutes until golden brown.

Step 6: Spray with avocado oil, and then flip it.

Step 7: Add a slice of American cheese on top of the beef.

Step 8: Cook 1-2 more minutes until the cheese is melty. Top each taco with lettuce, onion, pickles, and a drizzle of Big Mac sauce. Sesame seeds are also a great addition if you have them. Fold and enjoy!

  • Use lean beef: I use 90/10 beef – it’s flavorful without extra grease.
  • Choose the right skillet: A cast-iron skillet or griddle gives you that crispy smash taco sear.
  • Don't overcook: Gluten-free tortillas can get too crispy and may not fold if left too long. I learned the hard way that if you cook these too long, gluten-free tortillas can crack instead of folding. Trust me, keep the heat high but the time short!
  • Storage: Store leftover tacos (without toppings) in an airtight container for up to 3 days. Reheat in the microwave for 30-60 seconds, then top and serve.
  • Make it vegan: If you need a dairy-free option, swap the Greek yogurt for mayo and use vegan cheese slices.

Equipment

Ingredients 

  • 1 lb ground beef, I like to use 90/10 for less grease in the pan
  • 1 tsp garlic powder
  • 6 gluten free tortillas, Mission or Siete brands both work well. Mine were about 8 inches wide.
  • 6 slices American cheese
  • ¼ cup white onion, finely diced
  • salt & pepper
  • Pickles, for topping, optional
  • Shredded lettuce, for topping, optional
  • avocado oil spray
  • Big Mac Sauce

Instructions 

  • Combine your smash burger sauce ingredients in a bowl and set aside in the fridge until ready to serve.
  • Divide the 1 lb of beef into 6 equal portions and roll them each into a ball. Place the ball into the middle of a tortilla and press down to spread it out into a thin layer to cover as much of the surface of the tortilla as possible. Sprinkle the beef with salt, pepper, and some of the garlic powder. 
  • Heat a cast iron skillet or griddle over medium high heat. Place the tortilla meat-side down and cook for 2-3 mins until browned.
  • Spray the tortilla with more oil, then flip and add a slice of cheese on top of the meat, and cook for an additional 1-2 minutes. 
  • Serve topped with diced onion, shredded lettuce, pickles, and a drizzle of the big mac sauce. Enjoy!
