This baked jalapeño popper dip is my favorite new protein-packed app. At my house, we love it for football Sundays, a soccer team party, or just a family snack.

The base is Boursin garlic & herb, cream cheese, and plain Greek yogurt (no sour cream, no mayo), with shredded cheddar, parmesan, crispy bacon, and fresh jalapeños that roast right on the bacon’s sheet pan. A gluten-free panko topping goes on before it bakes to give it a little crunch, and it comes out golden on top and bubbling at the edges. SO GOOD!

Why Boursin and Greek Yogurt (and not a pile of spices)

If you've been here a while, you may have tried my dairy-free cranberry jalapeño dip. It's incredible. Today, I wanted tons of flavor built into this protein-packed version so I didn’t have to work so hard for it with a pile of spices, and that’s exactly what Boursin does. The garlic and herbs are already in there! One package of the Garlic & Herb flavor, and the spice list drops to garlic powder, onion powder, paprika, salt, and pepper.

The other half of the base is cream cheese plus plain Greek yogurt. I love this combination because you get the texture of a classic cream cheese dip with only 4 oz of cream cheese instead of a whole 8 oz brick. It’s still creamy, classic jalapeño popper dip…it just has WAY more flavor built in. It’s done in under an hour, it serves 8, and it’s 100% gluten-free. The heat is mild. Scoop it up with chips or veggies, your call!

A Few Ingredient Notes…

  • Cheddar: Grate it yourself! Pre-shredded cheese doesn’t melt and bake into dishes nearly as nicely, and you want this one smooth and gooey.
  • Gluten free panko: I use Kikkoman’s gluten free panko. Mixed with the melted butter and parmesan, it bakes golden and CRISPY, which is the whole point of the topping. I haven’t tried crushed gluten-free crackers on top, but it could work if you don’t have panko. Let me know if you try it!
  • Bacon: If you’ve never baked bacon on a sheet pan, my no-mess method for perfectly baked bacon in the oven is the same trick. The bacon is baked in the oven right alongside the jalapeños (more on that below).
  • Jalapeños: Fresh ones, roasted and seeded. Any jalapeño will work here; just keep the heat in mind. The smaller, darker peppers with little white lines on the skin tend to be hotter, the big smooth green ones tend to be milder, and a red jalapeño is just a riper one with a little more sweetness.
  • No Boursin? Use all cream cheese instead.

Recipe Variations

  • The bacon is optional if you want to skip it.
  • And while I haven’t tried this with dairy-free versions of cream cheese, yogurt, and Boursin, it should work. Let me know how it goes if you try it!

How to Make Jalapeño Popper Dip

Step 1: Roast. Whole jalapeños go right on top of the bacon so they roast in the drippings. Pull the pan when the bacon is crispy, and the peppers are soft with a few blistered, wrinkly spots.

Step 2: Seed and crumble. Slice the roasted peppers open and scrape out every seed (that’s where the heat lives), then dice. Crumble the bacon and save a small handful for the top.

Step 3: Mix. Stir until you don’t see streaks of Boursin or yogurt…a fork works here! A hand mixer gets it extra smooth.

Step 4: Fold in the jalapeños and bacon last so they stay in pieces.

Step 5: Spread. Smooth it into an even layer in the 8×8 or pie plate so it bubbles evenly instead of in one corner.

Step 6: Mix. The panko, butter, and parmesan should clump like damp sand when you pinch it.

Step 7: Top. Scatter the panko mixture over the dip with the reserved bacon right before it goes in the oven, not earlier.

Step 8: Bake. It’s done when the top is golden, and the edges are bubbling. Top with chives, then serve hot with chips.

Recipe Tips

  • Roast the jalapeños with the bacon on the baking sheet! This is my trick that keeps the dip mild, and it saves you a pan. The jalapeños are baked on top of the bacon at 400°F, and by the time the bacon is crispy, the peppers are soft and blistered. One pan, easy peasy cleanup!
  • A note about spice: Scrape out the seeds before you dice the peppers. And if you’re short on time you CAN skip the roasting, just know your dip may be on the spicy side!

Make it Ahead (But Not the Topping)

Preparing this ahead is the big question, so here’s the answer: you can prep everything ahead, except adding the panko on top. Mix the dip, spread it in the dish, cover it, and keep it in the fridge for up to 2 days before baking.

Make the panko topping right before it goes in the oven and sprinkle it on then. If you add it early, it gets SOGGY. Add it right before baking and it stays crispy - promise!

Leftovers will keep for 3 days in the fridge, and if you stored them in an oven-safe dish, reheating at 350°F crisps that topping right back up. Need more for the table? The rest of my gluten free appetizers are all in one spot.

Baked Jalapeño Popper Dip

Ingredients 

  • 8 slices bacon
  • 4 jalapeno peppers
  • 4 oz cream cheese
  • 5.3 oz Boursin Garlic & Herb cheese, (1 package)
  • 1 cup plain non-fat Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 1.5 cups shredded cheddar cheese, Fresh grated works best!
  • ½ cup grated parmesan cheese

Topping

Instructions 

  • Preheat the oven to 400 degrees. Line a baking sheet with foil and place the bacon strips in an even layer on the sheet. Place the jalapenos on top of the bacon. Bake for 15-18 minutes or until the bacon is done and crispy. Remove and drain the bacon on paper towels and crumble it into small pieces. Set aside. Dice the jalapenos, removing the seeds, and set aside. Reduce oven temp to 350.
  • Combine the cream cheese, Boursin, Greek yogurt, garlic powder, onion powder, paprika, salt, pepper, cheddar cheese, and parmesan cheese in a bowl. Mix with a fork, or you can also use an electric mixer to mix until smooth. Stir in the bacon pieces (setting a few aside for the topping) and the diced jalapenos.
  • Spray a 8×8 baking dish or pie plate with cooking oil. Add the cream cheese mixture into the dish and smooth out using a spatula.
  • Make the topping – mix the panko, melted butter, and parmesan in a bowl until it is a sand-like consistency. Sprinkle over the top of the dip along with the reserved bacon bits. 
  • Bake for 20 minutes or until the top is golden and sides are bubbling. Topped with chopped chives. Serve with gluten free crackers or tortilla chips and enjoy!

Notes

  • Make ahead: mix and spread the dip up to 2 days ahead and keep it covered in the fridge. Add the panko topping right before baking, or it will get soggy.
  • Freezing: this dip does not freeze well. The texture changes once it thaws, so make it ahead instead.
  • Leftovers: store in an airtight container in the fridge for up to 3 days. Reheat in the microwave until heated through (the topping will be soft), or, if you stored it in an oven-safe dish, bake at 350 degrees until warmed through, which crisps the topping back up.
  • For a lightened-up version, use 8 oz fat-free cream cheese and omit the Boursin cheese. Use low-fat shredded cheddar. You can also omit the bacon, if desired.
