Why this recipe works
I love a classic oatmeal cookie, but oftentimes they have regular flour and other ingredients I cannot have. These simple almond butter oatmeal cookies contain just 5 simple ingredients. Gluten free oats, almond butter (or nut butter of choice), eggs, coconut sugar, chocolate chips, and cinnamon. You can make them in 20 minutes from start to finish! Perfect for eating for dessert OR breakfast. You can also sub in whatever you have – peanut butter or nut butter of choice, and toppings of choice!
What You Need To Make These Gluten Free Oatmeal Chocolate Chip Cookies
- Old fashioned rolled oats– It’s important to look for gluten free oats if you have a gluten intolerance or Celiac Disease. I love Bob’s Red Mill brand and Thrive Market brand! Thrive’s is Certified GF, and Bob’s is batch tested and process it in a separate facility.
- Almond butter or nut butter of choice – peanut butter also works well. Please note if you use sun butter your cookies might turn green (which could be fun for St. Paddy’s!). Make sure the nut butter is smooth. My favorite is Costco almond butter. It only contains almonds and salt! My favorite peanut butter is Justin’s.
- Coconut sugar
- Eggs
- Baking soda
- Chocolate Chips – Enjoy life dark chocolate chips are my personal favorite.
- sea salt
- Cinnamon

Delicious cookies and indeed as easy as recipe implies. I can never get all the ingredients prepped in the estimated recipe prep time – but overall very fast and baked quickly.
I trusted Mary’s recipe and made three batches on first try. peanut butter+ choc chips (hubby’s fave), peanut butter + raisins, and almond butter with dried currants (my fave). For the almond butter I did put in a bit less sugar (2/3 cup) and they still came out really yummy and held together just fine!! Freezing them for postpartum. Thanks Mary!
Thank you for the review, Tanya! I am so glad you enjoyed them!
These turned out perfectly. I was very skeptical but they have a fantastic taste. My whole family loved them. These will be a regular

I’ve made many of MWL recipes. These are AMAZING. These are the best gluten free cookies I’ve ever made. I am taking them to friends tonight who cannot have gluten and I cannot wait to see them enjoy these cookies. I also look forward to experimenting with different additions to the recipe. I added coconut flakes today and they were delish!
Forgot to add the 5 stars!!! They are worth it!
These cookies were easy to make and are so delicious. I thought my husband would not be a fan because he would prefer regular peanut butter cookies, but he devoured them. Thanks for the good recipe without refined sugars or dairy. I have a dairy free son. No one in our house is gluten free, but who needs gluten in cookies when these are delicious without it. Also, I normally buy those oats and love them!
These were so delicious!! I used Justin’s Maple Almond Butter and I do not know if it was any different than using regular almond butter but I would make these again for sure. Easy and entire family approved!!
Review from my husband:
Very upset with Sarah for making these. It’s rare I will gush about something as simple as a cookie, cause let’s be honest they are not my favorite. But these are incredible and I can’t stop eating them.
Safe to say these will be a regular thing in our house.
So incredibly yummy and easy to make!!
Made these today and they were delicious!!! Will definitely be making these VERY often!! Thank you!!

Easy and yummy! I made with regular sugar because no coconut sugar on hand. Also, I say anything with oatmeal can found as a breakfast food 🤣
Easy. Delicious. I love putting the batter in a half cookie pan and make cookie bars!

Thanks Tiffany!
I cannot stop eating these. So yum!!
These are phenomenal! Even my kids, who are VERY suspicious of “healthy cookies”, loved them. Made with sunflower butter so they can take them to school.

These cookies were so easy to make and was delicious! I used raw almond butter and they spread a bit and stuck on the parchment paper, but still yummy. I am about to make another batch now!
