  • cooked shredded chicken: I used Rotisserie chicken. Feel free to use leftover chicken from another recipe, or cook chicken breasts and shred them. You can use turkey or canned tuna as a substitute if desired. For a vegetarian option, chickpeas or tofu can be used.
  • dill pickles: The star of the show! Crunchy pickles add a sharp, tangy flavor, and a crunchy texture that makes this salad super refreshing. Use sweet pickles if you prefer!
  • celery
  • red onion: If you prefer a milder onion flavor, use green onions (scallions).
  • sweet relish: This adds a sweet-tart balance that contrasts with the savory and tangy dill and onion. 
  • mayonnaise: We're making this a lighter option, using a mix of both Greek yogurt and mayonnaise.
  • plain Greek yogurt: We're lightening up this recipe with yogurt- which adds some extra protein as well! 
  • Dijon mustard: If you don't have mustard, the salad will still be flavorful without it.
  • coconut aminos: Coconut aminos add a hint of sweetness and umami, contributing to depth in flavor without the saltiness of soy sauce.
  • spices: We're adding a mix of dried chives, dried dill, garlic powder, and salt to add some savory herbiness to this salad. You can also add a little fresh dill if desired.

Ingredients 

  • 3 cups cooked shredded chicken , I used rotisserie chicken
  • ¾ cup dill pickles, chopped
  • ¼ cup celery, diced
  • ¼ cup red onion, diced
  • 2 tbsp sweet relish
  • cup mayonnaise
  • ½ cup plain Greek yogurt, use more mayo for dairy free
  • 1 tsp dijon mustard
  • 2 tsp coconut aminos
  • 1 tsp dried chives
  • 1 tsp dried dill
  • ½ tsp garlic powder
