Ingredient Notes

Simple ingredients and one pan are all you need to make this creamy Boursin chicken recipe!

recipe ingredients in small bowls and labeled
  • Boneless skinless chicken breasts: Our protein base, soaking up all the cheesy, garlicky goodness. Substitute with boneless, skinless chicken thighs if preferred.
  • Boursin cheese (Garlic & Herb): This creamy, dreamy cheese is our star ingredient-think of it as the glue holding all the flavors together. If you’re dairy-free, Kite Hill cream cheese or even dairy-free Boursin (yes, it exists!) works beautifully.
  • Cherry tomatoes: These little bursts of sweetness add brightness and balance to the dish. Don't have cherry tomatoes? No worries-grape tomatoes or even diced Roma tomatoes will do the trick.
  • Olive oil: Helps with roasting and adds richness. You can swap it with avocado oil if needed.
  • Salt and black pepper: Enhances overall flavor and seasoning.
  • Garlic powder: Adds a savory depth of flavor. Use fresh minced garlic if desired.
  • Italian seasoning: Brings aromatic herbs for a well-rounded flavor. Substitute with a mix of dried basil, oregano, and thyme.
  • Spaghetti squash: A low-carb alternative to pasta that pairs beautifully with the sauce. Zucchini noodles or gluten-free pasta can be used instead.
  • Pesto (Delallo Simply Pesto): Adds herby, nutty flavor to tie the dish together. Feel free to use homemade pesto or your favorite store-bought brand.

Expert Tips

Unlike other Boursin Chicken recipes, this version offers a seamless way to go dairy-free while still enjoying all the creamy, herby goodness you crave. Plus, my foolproof spaghetti squash cutting method will save you time and effort!

  • Variations: Don't have spaghetti squash on hand? Swap it for zucchini noodles, roasted sweet potatoes, or even gluten-free pasta. Want a protein boost? Add cooked shrimp or crumbled Italian sausage for a different spin. For a flavor twist, use sun-dried tomato pesto or add a handful of fresh spinach for extra greens.
  • Even Chicken Cooking: If using large chicken breasts, slice them in half lengthwise for even roasting.
  • Spaghetti Squash Shortcut: Microwave the squash for 4-5 minutes before cutting to soften the rind.
  • Dairy-Free Option: Use Kite Hill cream cheese as a Boursin alternative, and a dairy-free pesto. There's also a dairy-free Boursin cheese- if you can find it at your local grocery store, I recommend trying it!

Serving Tips

This dish can be served alongside a variety of side dishes, ranging from indulgent mashed potatoes to a side of vegetables like green beans, Brussels sprouts, or a simple side salad.

Garnish with a sprinkle of Parmesan, fresh basil, fresh parsley, or crushed red pepper flakes for extra flavor.

Storage Tips

Store leftover Boursin chicken in an airtight container for up to 3 days. To reheat, warm in the oven at 350°F until heated through or microwave in 1-minute intervals.

This dish isn't ideal for freezing due to the creamy cheese sauce, but the cooked spaghetti squash can be frozen separately.

  • Creative Leftover Idea: Turn leftovers into a filling for gluten-free wraps or spoon it over a bed of greens for a quick salad.
  • Meal Prep Tip: Cook the chicken, cheese, and spaghetti squash in advance and store them separately. Assemble and bake the dish when ready to serve for a fresh, creamy result. Perfect for an easy weeknight meal!

Recipe FAQs

Can I use a different cheese instead of Boursin?

Absolutely! Cream cheese, feta cheese, or goat cheese with a mix of garlic and herbs makes a great substitute.

What if I don't have spaghetti squash?

You can use zucchini noodles or gluten-free pasta instead.

Is this dish keto-friendly?

Yes, just ensure your pesto is low-carb, and this is a creamy low-carb chicken bake that fits well within a keto meal plan.

Ingredients

  • 4 smaller chicken breasts, or 2 large cut in half lengthwise
  • 1 package Boursin cheese, I used garlic & herb flavor (sub Kite Hill cream cheese for dairy free!
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • ½ tsp salt, + more to taste
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 large spaghetti squash
  • ½ cup pesto, I like Delallo brand simply pesto!

Instructions

  • Preheat oven to 400. Add the Boursin to the center of a 9×13 inch casserole dish.
  • Place the chicken breasts and tomatoes around the cheese.
  • Drizzle with olive oil, then season the chicken breasts with the salt, pepper, garlic powder and Italian seasoning. Set aside.
  • Cut a spaghetti squash in half and scoop out the seeds (I like to cut in half around the smaller middle / not lengthwise – it's so much easier!) Place cut-side down on a lined baking sheet.
  • Add the squash and the casserole dish into the oven at the same time and bake for 40 mins.
  • Shred the chicken (either on a cutting board or right in the dish) and add in the cooked squash noodles. Add in the pesto and toss everything together with the melted Boursin cheese.
  • Serve topped with Parmesan cheese and season with salt and pepper to taste. Enjoy!

    Absolutely delicious—and easy to make.

DELICIOUS!!! I made this for the first time and it was amazing, so quick and easy and it had SO MUCH FLAVOR! My daughter is trying to heal her gut and is gluten and dairy free, so it has been challenging to cook for her. I made this with the dairy free options in the suggestions. It was so easy and we all loved it! (Don’t tell my husband, he doesn’t know it was the healthy version 😂). Thank you!

Making this for the 3rd time, we love it. Thank you for sharing!!

  4. Jessica says:

So creamy and delicious. I left the pesto on the side just because I wanted to see if I could avoid the extra calories and my husband still loved it. AlsoI had a big batch of precooked chicken to use so I didn’t follow the recipe exactly but this is a great easy meal and wonderful flavor combination. I’ll definitely make it again.

This was so, so very delicious and easy to make. My son and my husband couldn’t wait for me to make it again. We looked forward to leftovers the next day. I will keep this in the rotation for sure! Thank you!
