Creamy Boursin Chicken Bake Recipe

Ingredients

  • 4 smaller chicken breasts or 2 large cut in half lengthwise
  • 1 package Boursin cheese I used garlic & herb flavor (sub Kite Hill cream cheese for dairy free!
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • ½ tsp salt + more to taste
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 large spaghetti squash
  • ½ cup pesto I like Delallo brand simply pesto!

Instructions

  • Preheat oven to 400. Add the Boursin to the center of a 9x13 inch casserole dish.
  • Place the chicken breasts and tomatoes around the cheese.
  • Drizzle with olive oil, then season the chicken breasts with the salt, pepper, garlic powder and Italian seasoning. Set aside.
  • Cut a spaghetti squash in half and scoop out the seeds (I like to cut in half around the smaller middle / not lengthwise - it’s so much easier!) Place cut-side down on a lined baking sheet.
  • Add the squash and the casserole dish into the oven at the same time and bake for 40 mins.
  • Shred the chicken (either on a cutting board or right in the dish) and add in the cooked squash noodles. Add in the pesto and toss everything together with the melted Boursin cheese.
  • Serve topped with Parmesan cheese and season with salt and pepper to taste. Enjoy!

    • Variations: Don’t have spaghetti squash on hand? Swap it for zucchini noodles, roasted sweet potatoes, or even gluten-free pasta. Want a protein boost? Add cooked shrimp or crumbled Italian sausage for a different spin. For a flavor twist, use sun-dried tomato pesto or add a handful of fresh spinach for extra greens.
    • Even Chicken Cooking: If using large chicken breasts, slice them in half lengthwise for even roasting.
    • Spaghetti Squash Shortcut: Microwave the squash for 4–5 minutes before cutting to soften the rind.
    • Dairy-Free Option: Use Kite Hill cream cheese as a Boursin alternative, and a dairy-free pesto. There’s also a dairy-free Boursin cheese– if you can find it at your local grocery store, I recommend trying it!
    • Storage: Store leftover Boursin chicken in an airtight container for up to 3 days. To reheat, warm in the oven at 350°F until heated through or microwave in 1-minute intervals.
