Banana-free Acai Smoothie Bowl

I love me some bananas, but they are loaded with sugar and sometimes make my stomach hurt. I try to avoid them when possible. This smoothie is packed with veggies and you would never know it! Cauliflower is essentially tasteless in smoothies, and one serving contains 77 percent of the recommended daily value of vitamin C. It's also a good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese.

Ingredients

  • 1 packet Trader Joe's frozen acai
  • 1/2 cup spinach, packed
  • 1/2 cup Trader Joe's frozen riced cauliflower
  • 1/2 cup frozen mango chunks
  • 2 tbsp almond butter
  • 1 pitted date
  • 1 cup full-fat coconut milk

Instructions
 

  • Combine all ingredients and blend until thick. Add water if you need to thin it out a little.
  • Top with whatever toppings you desire. Here I used Trader Joe's organic unsweetened coconut chips, chia seeds, bee pollen, and goji berries. Enjoy!
