Introducing my Air Fryer Pork Loin Roast! This roast is dry-rubbed with a delicious blend of spices, adding flavor to every bite.
It yields the most tender meat and crispy pork skin. Plus, with only 5 minutes of prep time, your air fryer is really the workhorse of this recipe. It's air-fried and ready in 40 minutes, leaving you tons of time to make a couple of easy sides, and dinner is served!
This recipe is easy enough to make for a family dinner, elevated enough for a special occasion, and tasty enough for both!
Ingredient Notes

- boneless pork loin roast: Pork loin is a lean cut of meat that is tender and flavorful. I used a 3lb roast. For different sizes, adjust the cooking time to 15 minutes per pound.
- olive oil
- dry rub: Coconut sugar (substitute brown sugar if preferred), paprika, onion powder, garlic powder, salt, ground mustard, and cayenne pepper.
How To Make Air Fryer Roast Pork

Step 1
Combine the dry dub ingredients in a small bowl.
Step 2
Mix to combine. This can be made up to 3 days in advance.

Step 3
Preheat air fryer to 360 for 5 minutes. Dry the pork with a paper towel. Coat all sides of the pork loin with the oil.
Step 4
Sprinkle with the dry rub and use your hands to press it into all sides of the roast so it sticks. You should use all of the dry rub, adding multiple coats if needed.
Step 5
Add the roast to your air fryer basket.
Step 6
Cook for 15 minutes per pound – my 2.87 lb roast took about 40 minutes. The internal temperature should be at 145 degrees. Let it rest tented with foil. Serve with sides of your choice, season with kosher salt and black pepper if desired, and enjoy!

Weight: My pork loin weighed 2.87 lbs and took 40 minutes to cook in the air fryer. If your pork loin is bigger or smaller, adjust the cooking time in increments of 15 minutes per pound. If you aren't sure if it's done, use an instant read thermometer (meat thermometer). The internal temperature should read 145 degrees F.
Slicing: This air fryer pork roast turns out incredibly tender, so slicing should not be an issue. Using a cutting board and sharp knife, slice the cooked pork loin into ½ inch slices.
Serving: I served mine warm alongside mashed sweet potatoes and green beans. Feel free to serve with your favorite side dishes-vegetables like broccoli or asparagus work well, and any kind of potato- baked, mashed, or roast potatoes are great options.
Storage: Store leftover pork roast in an airtight container for up to 3-4 days. Reheat in the air fryer for 3-5 minutes, and serve with sides of choice.

Tried this recipe. I thought I was cooking a pork roast but it turned out to be another type of pork roast with bones – like it was meant to be cut up for pork chops. Meat was nice, moist and tasty. adult kids said it tasted “good” but didn’t feel it was anything special. Along with the roast in the air fryer, we also baked some potatoes in the same fryer. Bot the 3 pound plus and the potatoes both finished at the same time. Plan to keep this recipe and try it on a different cut of pork.
I have a 4.32 pound pork roast, so I calculated it and it should take about an hour to cook. I will keep watch with my meat thermometer. I’ve never heard about coconut sugar? What would you use to substitute it?
