Banana-free Acai Smoothie Bowl
I love me some bananas, but they are loaded with sugar and sometimes make my stomach hurt. I try to avoid them when possible. This smoothie is packed with veggies and you would never know it! Cauliflower is essentially tasteless in smoothies, and adds a ton of nutrition.
Ingredients
- 1 packet Trader Joe's frozen acai
- ½ cup spinach, packed
- ½ cup Trader Joe's frozen riced cauliflower
- ½ cup frozen mango chunks
- 2 tbsp almond butter
- 1 pitted date
- 1 cup full-fat coconut milk
Instructions
- Combine all ingredients and blend until thick. Add water if you need to thin it out a little.
- Top with whatever toppings you desire. Here I used Trader Joe's organic unsweetened coconut chips, chia seeds, bee pollen, and goji berries. Enjoy!
