How to Make This Boursin Chicken Pasta

Step 1: Bring a pot of water to a boil. Cook the pasta until slightly al dente, then drain and set aside. Heat olive oil in a large skillet over medium-high. Add the chicken breast, season with salt, pepper, and garlic powder. Cook until browned and cooked through. Remove and set aside.

- 1 tbsp olive oil
- 1.5 lbs chicken breasts, cut into 1-2 inch cubes
- 1 tsp salt, + more to taste
- ½ tsp pepper
- 1 tsp garlic powder
- 3 tbsp butter
- 2 cloves minced garlic
- 1 cup frozen peas
- 1 cup chopped asparagus
- 1 cup zucchini
- 1 tsp Italian seasoning
- 1 cup chicken broth
- 5.5 oz Boursin cheese, 1 package – garlic and herb flavor. Use dairy free Boursin if desired.
- ½ cup grated parmesan cheese, or pecorino romano. Sub ¼ cup vegan parm or nutritional yeast for dairy free.

Instructions
- Bring a pot of water to a boil and cook pasta according to package directions, slightly al dente. Drain and set aside.
- Heat the olive oil in a large skillet over medium high heat. Add the chicken pieces and season with salt, pepper, and garlic powder. Let them cook for a few minutes on one side before flipping. They should be nicely browned. Continue stirring until the chicken pieces are completely cooked through. Remove and set aside.
- Melt the butter in the skillet and add the garlic. Saute for 1 minute until fragrant. Add the frozen peas, chopped asparagus and zucchini. Sprinkle with the Italian seasoning and some more salt and pepper. Saute for 1-2 minutes.
- Pour in the chicken broth and stir. Bring to a boil, then reduce heat to medium low and simmer for 5 minutes.
- Reduce the heat to low and add in the Boursin cheese and parmesan. Stir until melted.
- Add the cooked chicken back to the pan along with the cooked pasta and gently stir to combine everything.
- The sauce will thicken as you stir / as it sits over the next few minutes. Season with salt and pepper to taste.
- Serve with more parmesan and parsley on top and enjoy!

I made this for my family but did make a few changes. I did not add chicken (or associated seasonings with cooking chicken) and I swapped out asparagus/zucchini for frozen broccoli. I also cooked the pasta with some additional chicken broth after sautéing the garlic in order to keep this a one pot meal. I paired it with some chicken spiedini. This was delicious! I would definitely make again and know that it would be equally delicious as written. I love MWL recipes for easy meals for my whole family to enjoy (myself/husband/1 year old and almost 3 year old).
