Creamy Boursin Chicken Pasta (One-Pan Dinner)

This creamy Boursin chicken pasta is a one-pan meal packed with tender chicken, bright spring vegetables, and a rich garlic and herb cheese sauce. Ready in under 30 minutes, it’s comforting, flavorful, and made with simple ingredients your whole family will love.

Ingredients

  • 12 oz gluten free pasta I used Jovial Farfalle
  • 1 tbsp olive oil
  • 1.5 lbs chicken breasts cut into 1-2 inch cubes
  • 1 tsp salt + more to taste
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 3 tbsp butter
  • 2 cloves minced garlic
  • 1 cup frozen peas
  • 1 cup chopped asparagus
  • 1 cup zucchini
  • 1 tsp Italian seasoning
  • 1 cup chicken broth
  • 5.5 oz Boursin cheese 1 package - garlic and herb flavor. Use dairy free Boursin if desired.
  • ½ cup grated parmesan cheese or pecorino romano. Sub ¼ cup vegan parm or nutritional yeast for dairy free.
  • chopped parsley for garnish

Instructions

  • Bring a pot of water to a boil and cook pasta according to package directions, slightly al dente. Drain and set aside.
  • Heat the olive oil in a large skillet over medium high heat. Add the chicken pieces and season with salt, pepper, and garlic powder. Let them cook for a few minutes on one side before flipping. They should be nicely browned. Continue stirring until the chicken pieces are completely cooked through. Remove and set aside. 
  • Melt the butter in the skillet and add the garlic. Saute for 1 minute until fragrant. Add the frozen peas, chopped asparagus and zucchini. Sprinkle with the Italian seasoning and some more salt and pepper. Saute for 1-2 minutes.
  • Pour in the chicken broth and stir. Bring to a boil, then reduce heat to medium low and simmer for 5 minutes. 
  • Reduce the heat to low and add in the Boursin cheese and parmesan. Stir until melted.
  • Add the cooked chicken back to the pan along with the cooked pasta and gently stir to combine everything.
  • The sauce will thicken as you stir / as it sits over the next few minutes. Season with salt and pepper to taste.
  • Serve with more parmesan and parsley on top and enjoy! 

Notes

  • Nutrition info is for 1 serving = ⅙ of the total recipe.
  • Store this Boursin chicken pasta in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop with a splash of broth or pasta water to bring back the creamy texture and prevent dryness.
