Ingredients You'll Need

Ingredients arranged on a surface include a bowl of cubed chicken breasts, gluten-free pasta, zucchini slices, grated parmesan, asparagus pieces, peas, Boursin cheese, garlic, butter, chicken broth, and seasonings like garlic powder, salt, and pepper.
  • Gluten-free pasta - I used Jovial farfalle, but any short pasta shape works. Cook it slightly al dente.
  • Chicken breast - Cut into bite-sized pieces for quick, even cooking.
  • Olive oil & butter - For sautéing and building the sauce base.
  • Fresh garlic - Adds depth and fragrance to the dish.
  • Peas, asparagus, zucchini - These extra veggies bring brightness and texture.
  • Italian seasoning - A shortcut blend that infuses every bite with herb flavor.
  • Chicken broth - Helps deglaze the pan and creates a silky sauce with the cheese.
  • Boursin cheese - The garlic and herb flavor is key! It melts beautifully into a creamy, tangy sauce. Feel free to use dairy free Boursin if preferred!
  • Parmesan or pecorino - For salty richness and body. You can substitute ¼ cup vegan parmesan or nutritional yeast for dairy free.
  • Fresh parsley - Optional garnish that brings color and freshness.

Why Boursin Works So Well

This soft, creamy cheese melts into sauces like a dream - no heavy cream needed. The garlic and herb version adds bold flavor without extra effort.

Recipe Tips

  • Add the Boursin off heat
Turn the heat to low before stirring in the Boursin cheese. This helps it melt smoothly without breaking or clumping.
  • Don't skip seasoning the chicken
Seasoning the chicken well before browning builds flavor from the start and keeps the dish from tasting flat.
  • Customize with fresh herbs or lemon zest
Chopped fresh basil, parsley, or even a bit of lemon zest can brighten the dish and balance the rich, creamy sauce.

  • 1 tsp salt, + more to taste
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 3 tbsp butter
  • 2 cloves minced garlic
  • 1 cup frozen peas
  • 1 cup chopped asparagus
  • 1 cup zucchini
  • 1 tsp Italian seasoning
  • 1 cup chicken broth
  • 5.5 oz Boursin cheese, 1 package – garlic and herb flavor. Use dairy free Boursin if desired.
  • ½ cup grated parmesan cheese, or pecorino romano. Sub ¼ cup vegan parm or nutritional yeast for dairy free.
  • chopped parsley, for garnish

Instructions

  • Bring a pot of water to a boil and cook pasta according to package directions, slightly al dente. Drain and set aside.
  • Heat the olive oil in a large skillet over medium high heat. Add the chicken pieces and season with salt, pepper, and garlic powder. Let them cook for a few minutes on one side before flipping. They should be nicely browned. Continue stirring until the chicken pieces are completely cooked through. Remove and set aside.
  • Melt the butter in the skillet and add the garlic. Saute for 1 minute until fragrant. Add the frozen peas, chopped asparagus and zucchini. Sprinkle with the Italian seasoning and some more salt and pepper. Saute for 1-2 minutes.
  • Pour in the chicken broth and stir. Bring to a boil, then reduce heat to medium low and simmer for 5 minutes.
  • Reduce the heat to low and add in the Boursin cheese and parmesan. Stir until melted.
  • Add the cooked chicken back to the pan along with the cooked pasta and gently stir to combine everything.
  • The sauce will thicken as you stir / as it sits over the next few minutes. Season with salt and pepper to taste.
  • Serve with more parmesan and parsley on top and enjoy!

I love easy recipes, and this was one. I used a broasted chicken to make it even easier. The flavor was great and the sauce was just enough! I used what veggies I had on hand. This will be kept in the regular meals!

This was fantastic! I made it with Dairy Free Boursin and there was no compromise on creaminess or on flavor. My husband asked if we had enough for leftovers the next day, and he isn’t a big fan of leftovers so that is saying a lot. It reheated great!

    1. Mary says:

So glad to hear it, thanks Kristin!

This was so yummy! And high in protein! The leftovers reheated well on the stovetop; I just added a bit of chicken broth. One thing to note: the recipe makes a LOT so use a big pan!

Another delicious recipe! The only thing I’d do different next time is halve the recipe. This made a lot of I’m going to freeze left overs and hope for the best 😊
