Ingredients

  • 2 cups frozen pineapple chunks
  • 1 cup light canned coconut milk
  • ½ cup 100% pineapple juice
  • 1 tbsp maple syrup omit if you don't want it sweet

Instructions

  • Blend all ingredients in a high-powered blender on high for 1 minute or until creamy.
  • If you prefer for it to be thicker, add more frozen pineapple and blend again. If you prefer for it to be thinner, add more coconut milk.
  • Top with cherries, whipped cream, or a fun drink umbrella and enjoy!

Notes

Expert Tips

  • Sweetness: To make it sweeter, add more maple syrup.
  • Cocktail Version: If you want to make this into a quick and easy cocktail, add 3 oz of rum to the blender. You may need to add more pineapple chunks if it’s too thin.
  • Blender: I recommend a high speed blender to get this pina colada mocktail super smooth and creamy. This is the one I have, and I love it!

Serving Tips

  • Serve this pina colada mocktail in your favorite glass and top with whipped cream, cherries, and a fresh pineapple wedge if desired.
  • You can also add one of those fun drink umbrellas or a hibiscus flower to make it extra fun and tropical.
