Gluten Free Chicken Noodle Soup with Pastina

- 2 tbsp olive oil
- 1 onion diced
- 3 carrots peeled and diced
- 3 pieces celery diced
- 3 cloves minced garlic
- 1 tsp salt
- ½ tsp pepper
- 1 tsp onion powder
- ½ tsp oregano
- 2 cups cooked shredded chicken
- 8 cups chicken broth
- 12 oz uncooked gluten free pasta I used Jovial Foods Stelline star pasta
- 1 tbsp fresh squeezed lemon juice
- chopped parsley for garnish, if desired
- parmesan cheese for topping, if desired
Heat the olive oil in a large pot or dutch oven. Add in the onions, carrots, celery, and garlic. Saute for 4-5 minutes until the veggies are beginning to soften and the garlic is fragrant.
Add in the salt, pepper, onion powder, oregano, and chicken. Stir. Pour in the broth. Bring it to a boil.
Add the pasta and cook according to package directions over medium heat. This is 10 minutes for the stelline.
Stir in the lemon juice. Serve the soup topped with fresh parsley and parmesan, if desired. Enjoy!
Storage: The gluten free pastina absorbs a lot if the broth the longer it sits. If you plan on saving leftovers, I would cook and store the pastina separately and add it to the soup right before serving. Alternatively, you can also add 2 more cups broth if you like it more soupy! You can store the soup in the refrigerator for up to 4 days.
Pasta: Any pasta will work for this recipe!
Cooked chicken: You can either use rotisserie chicken (just look for gluten free), or make your own boiled / poached chicken at home. I like to fill a pot with water, add the chicken breast, bring to a boil, then cover and remove from heat. Let it sit for 15 minutes, then remove the chicken and shred using two forks. You can also make shredded chicken in the Instant Pot.
Flavor: Add a parmesan rind to the broth as it cooks for extra flavor.
Freezing: Again, if you plan to freeze this, I would do so without the pasta. Add the cooked pasta to the thawed broth and enjoy! You can freeze the chicken and veggies in broth for up to 3 months.
Keto Chicken Soup: For a No Noodle Chicken Soup, simply omit the pasta all together.
