Ingredients

  • 8 oz block feta cheese
  • ¾ cup plain non-fat Greek yogurt
  • 1 tsp lemon zest
  • 1 tsp Italian seasoning
  • 1 tbsp extra virgin olive oil
  • 8 oz hummus I like Cava brand
  • 8 oz Tzatziki sauce I like Cava brand
  • 1 cup diced tomatoes
  • 1 cup diced cucumbers
  • ½ cup chopped kalamata olives
  • ½ cup diced pepperoncinis
  • ½ cup crumbled feta for topping
  • chopped mint and parsley for garnish

Instructions

  • Combine the block of feta, Greek yogurt, lemon zest, and 1 tsp Italian seasoning, and 1 tbsp olive oil in a food processor. Pulse until smooth, scraping down the sides halfway through. Spread this out in a thin layer on a plate or in a casserole dish.
  • Next, spread the hummus over top, followed by a layer of the tzatziki sauce.
  • Next add the diced tomatoes, diced cucumbers, olives and pepperoncinis. Sprinkle some of the feta on top along with the chopped parsley and mint.
  • Serve with Simple Mills triangle pita crisps or other gluten free pita chips of choice and enjoy!

Notes

  • Even though this Mediterranean feta dip is naturally gluten-free, it’s always important to double-check ingredient labels to avoid hidden sources of gluten.
  • If you don’t have a food processor you can use a stand mixer instead. Just make sure you mix until it’s super smooth.
  • Let the feta come to room temperature before blending for the smoothest consistency.
  • Want more flavor? Add a pinch of black pepper, sea salt, garlic powder, or a squeeze of lemon juice to help balance all of the flavors.
  • For a spicy kick, sprinkle on some red pepper flakes before serving.
  • Customize it! Try adding roasted red peppers, sun-dried tomatoes, green onions, or even a drizzle of honey for a sweet/savory contrast.
  • Store leftovers in an airtight container for up to 3 days.
  • Prepare the whipped feta base up to 2 days in advance and store it separately. Assemble the rest before serving.
