Easy Blackberry Mojito with Honey Syrup

This blackberry mojito recipe is a fresh summertime cocktail made with juicy blackberries, fresh mint, lime juice, rum, bubbly club soda, and naturally sweet honey syrup. It comes together in minutes, tastes bright and bubbly over ice, and happens to be paleo and gluten free too!

Ingredients

  • 5 fresh mint leaves
  • juice from ½ lime
  • 3 blackberries + 2 more for garnish
  • 2 oz rum I like Bacardi Silver
  • ½ oz honey syrup* or agave syrup
  • club soda to top off

Instructions

  • Add the mint leaves, blackberries, and lime juice to a glass. Use the back of a knife or a muddler to crush the blackberries and mint leaves, releasing their juices and flavors. Add in the rum and honey syrup, followed by ice to fill the cup. Fill the glass to the top with club soda, then stir well. Serve with additional blackberries and mint leaves on top for garnish, and enjoy!

Notes

  • Fresh lime juice really makes a difference here. Bottled lime juice just doesn’t give the same bright flavor once it’s mixed with the mint and bubbly club soda.
  • Don’t completely shred the mint leaves while muddling. A light crush gives the drink fresh mint flavor without making it grassy tasting.
  • Taste the cocktail before adding more honey syrup since sweeter blackberries usually need less added sweetness.
  • Add the club soda last so the drink stays bubbly instead of going flat too quickly.
  • This cocktail is best served fresh since the club soda will lose its fizz as it sits. You can make the honey syrup ahead of time and store it in the fridge for up to a week.
  • If you’re prepping blackberry mojitos for guests, muddle the blackberries, mint, lime juice, and honey syrup earlier in the day, then add the rum, ice, and club soda right before serving.
