*If you prefer to use mashed potatoes or sweet potatoes as the topping, I've found that 4-5 russet or 3-4 medium-sized sweet potatoes works well. Peel, cut, boil for ~ 20 minutes until tender, then mash with a potato masher. Add 2 tbsp ghee, ½ cup full fat coconut milk (the hardened cream part), 2 tsp salt (to taste), 1 tsp pepper, and 2-3 tbsp chicken broth. Mash until combined. Enjoy!
