Easy Kielbasa and Cabbage Skillet
This kielbasa and cabbage skillet is the kind of dinner I make when I need something filling and made with ingredients I already have on hand. Smoky sausage, tender cabbage, onion, Dijon mustard, and a splash of apple cider vinegar come together in one pan for a cozy, budget-friendly meal that's ready in less than 30 minutes!

- 1 tbsp olive oil
- 1 tbsp butter use vegan for dairy free or ghee for Whole30
- 14 oz kielbasa or organic smoked sausage, sliced into ¼" rounds. I use Pederson Farm's brand!
- 1 small onion chopped into 1-inch pieces
- ¾ head of cabbage cored and roughly chopped into 1-inch pieces - will yield about 3-4 cups once chopped
- 2 cloves minced garlic
- ½ tsp salt + more to taste
- ½ tsp pepper
- ½ tsp caraway seeds
- 1 tsp dijon mustard
- splash apple cider vinegar
Heat the olive oil in a large skillet over medium high heat.
Add the sausage pieces in a single layer and let them cook, untouched for 3-4 minutes. Flip / stir and continue cooking for another 2-3 minutes until browned. Remove and set aside.
To the same pan, add the butter, onion, and cabbage. Saute for 5-7 minutes until the onion is soft and the cabbage is wilted and starting to brown.
Add in the garlic and stir for 1 minute. Add the sausage back into the pan along with the salt, pepper, caraway seeds, splash of apple cider vinegar, and dijon, and stir for 1 more minute.
Season with more salt, to taste, and enjoy!
