Bacon-Wrapped Jalapeno Popper Chicken {Paleo}

Ingredients

  • 2 lbs chicken breasts 4 medium breasts total
  • ½ tsp sea salt
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 8 pieces sugar free bacon
  • ½ cup Kite Hill Foods cream cheese
  • 2 jalapeños, seeds removed and sliced into 8 strips total

Instructions

  • Preheat oven to 425. Slice your chicken breasts in half width-wise and pound to be ½ inch to ¾ inch thick. Season each piece with a bit of salt, onion powder, and garlic powder.
  • Place one jalapeno strip and about 1 tbsp cream cheese in the center of each ½ breast, then fold. Wrap one piece of bacon around each piece of chicken, then place them seam-side down on a parchment lined baking sheet.
  • Bake for 30 minutes or until your chicken reaches an internal temperature of 165 degrees. Broil for 1-2 minutes if you want your bacon to be on the crispier side. Serve with some roasted potatoes and a veggie, and enjoy!
