Apple Cinnamon Protein Muffins (Gluten-Free!)

These apple cinnamon protein muffins are everything you love about cozy fall baking. With sweet apples, warm spices, and a soft, high-protein crumb that keeps you full for hours. Made with Greek yogurt, cinnamon applesauce, and vanilla protein powder, they’re the perfect grab-and-go breakfast or post-workout snack!

Ingredients

  • ¼ cup coconut oil measured after melting
  • ½ cup cinnamon applesauce
  • ½ cup plain fat-free Greek yogurt
  • 2 tbsp maple syrup
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups gluten free 1:1 flour I like King Arthur Baking brand
  • ½ cup coconut sugar
  • ½ cup vanilla protein powder use code MARY10 for a discount
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1.5 cups finely diced apple ¼-1/2 inch pieces. About 1 large apple, peeled and cored.

Instructions

  • Preheat oven to 350. Spray a muffin tin with avocado oil spray. 
  • Combine wet ingredients in a large bowl (melted coconut oil, applesauce, yogurt, maple syrup, egg, and vanilla) and mix to combine.
  • Add dry ingredients (flour, sugar, protein powder, cinnamon, baking powder, baking soda, and salt) to another bowl and mix to combine.
  • Add the dry ingredients into the wet ingredients and stir, then gently fold in the diced apples. 
  • Divide the mixture evenly between the 12 cups, filling almost to the top. Sprinkle with a little more coconut sugar. 
  • Bake for 22-24 minutes or until the tops have risen and set.
  • Let the muffins cool for 20-30 minutes before enjoying!

Notes

  • Don’t overmix. Stir only until the flour disappears; protein powder can toughen muffins if overworked.
  • Choose your protein wisely. Whey protein yields lighter results, while plant-based powders add density. Avoid “meal replacement” blends with gums or thickeners.
  • Keep it moist. Applesauce and Greek yogurt are the secret to soft, bakery-style muffins.
  • Storage & Freezer Tips: Store in an airtight container for up to 4 days at room temperature, a week in the fridge, or freeze up to 3 months – perfect for meal prep snacks!
