Savory Breakfast Hash

Ingredients

  • 1 lb ground turkey (or pork)
  • 2 tbsp ghee, divided
  • 1 apple, diced
  • 2 cups diced butternut squash (I used the zig zags from Trader Joe's)
  • 1.5 cups chopped kale
  • 1 cup purple cabbage
  • ¼ cup chicken broth
  • 2 tbsp Primal Palate Breakfast Blend Seasoning (if you don't have this, see below for how to make your own)

Spice blend

  • ½ tsp sea salt
  • ½ tsp turmeric
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cinnamon
  • ½ tsp sage
  • ½ tsp oregano

Instructions

Spice Blend

  • Combine all spices and use 2 tbsp for recipe. Keep the extra for another time!

Hash

  • Heat 1 tbsp ghee in a large cast iron pan over medium heat. Add turkey (or pork) and 1 tbsp of the spice blend and saute until browned and cooked through. Remove from pan with a slotted spoon and set aside.
  • In the same pan, add the extra 1 tbsp of ghee along with the diced apple, butternut squash, and cabbage. Add the remaining 1 tbsp of the spice blend and saute for 5 minutes until everything begins to brown. Add chicken broth and cover, cooking for about 3-4 minutes until the liquid is gone. Remove cover and continue to stir, adding the kale. Cook for an additional 1-2 minutes until the kale begins to wilt and add turkey back to the pan. Stir to combine everything for 1-2 additional minutes, Enjoy!
