Blueberry Breakfast Sausage {Whole30}

This Blueberry Breakfast Sausage is the perfect combination of sweet and savory flavors. It is sugar free, Whole30, paleo, and Keto friendly!

Ingredients

  • 1 lb ground pork
  • 1 tbsp olive or avocado oil
  • 20-25 blueberries
  • 1 tsp fennel seeds
  • 1 tsp sea salt
  • 2 tsp ground sage
  • 1 tsp thyme
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp all spice, can sub 1/4 tsp cinnamon & 1/4 tsp nutmeg
  • 1/2 tsp pepper

Instructions
 

  • Combine all ingredients EXCEPT blueberries in a bowl. Mix the pork and spices well using your hands to combine. Form into 6 patties (about 3 inches wide, 1 inch thick) and place on a plate. Place 4 blueberries on top of each patty and press them down gently into the pork mixture (so they are almost fully submerged).
  • Heat oil in a large skillet over medium heat. Add patties (blueberry side up) and cook for 3-4 minutes. Flip and cook for an additional 3-4 minutes until browned and cooked through. Drain on a paper towel lined plate, serve, and enjoy!
