Ingredients

  • 1 lb ground pork or ground turkey
  • 1 tbsp olive or avocado oil
  • 20-25 blueberries
  • 1 tsp fennel seeds
  • 1 tsp sea salt
  • 2 tsp ground sage
  • 1 tsp thyme
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • ½ tsp all spice can sub 1/4 tsp cinnamon & 1/4 tsp nutmeg
  • ½ tsp pepper

Instructions

Stovetop Blueberry Sausage

  • Combine all ingredients EXCEPT blueberries in a bowl. Mix the pork and spices well using your hands to combine.
  • Form into 6 patties (about 3 inches wide, 1 inch thick) and place on a plate. Place 4 blueberries on top of each patty and press them down gently into the meat mixture (so they are almost fully submerged).
  • Heat oil in a large skillet over medium heat. Add patties (blueberry side up) and cook for 3-4 minutes. Flip and cook for an additional 3-4 minutes until browned and cooked through. Drain on a paper towel lined plate, serve, and enjoy!

Air Fryer Blueberry Sausage

  • To cook the patties in the air fryer, preheat to 400 for 3 minutes. Spray your air fryer basket with oil. Add the patties in a single layer (cooking in batches if necessary), and cook for 8-9 minutes, flipping after the first 5 minutes. Enjoy!

Notes

Less fat: To make these more macro-friendly, use ground turkey or ground chicken instead of pork.
Serving: I like to serve these with some eggs and hash browns! They also go well with gluten free pancakes!
Storage: Store leftover blueberry sausage patties in an airtight container in the fridge for up to 4 days.
Reheating: To reheat, microwave for 30-60 seconds, or air fry at 400 for 2-3 minutes.
