Preheat oven to 400. Peel the skin off the beets using a peeler or a knife and cut beets into 1 inch chunks.
Place on a parchment-lined baking sheet and toss with the olive oil, thyme, and salt. Bake for 40 minutes, flipping the beets halfway through.
Roasted Pecans
Preheat oven to 350. Toss pecans with maple syrup, salt, and cayenne. Lay out on a foil-lined baking sheet and bake for 15 minutes, tossing halfway through. These make an awesome snack, too!
Maple Dijon Vinaigrette
Add all dressing ingredients in a bowl and whisk to combine. This can be stored in the fridge for up to 2 weeks.
Salad
Add all salad ingredients to a dish and make them look pretty, then top with the dressing :) Add a protein if desired, but this salad is pretty fantastic without any meat or fish added! Enjoy!
