Ingredients

  • 1 lb organic ground pork or ground turkey or ground chicken
  • 1 tbsp olive oil or avocado oil
  • 1 tsp fennel seeds
  • 1.5 tsp ground sage
  • 1 tsp thyme
  • ½ tsp garlic powder
  • ½ tsp Allspice can sub 1/4 tsp nutmeg + 1/4 tsp cinnamon
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper

Instructions

  • Combine the meat and spices in a bowl and mix well using clean hands. Form the mixture into 6 patties, about 3 inches wide and 3/4 inches thick.

Stove Top / Skillet

  • Heat the oil in a large cast iron pan or non stick pan over medium high heat. Add the sausage patties and cook them for 3-4 minutes on each side, until they're cooked through.
  • Transfer them to a paper towel-lined plate to drain some of the fat. Serve alongside your favorite breakfast foods and enjoy!

Air Fryer

  • Preheat air fryer to 400 for 3 minutes. Spray the basket with oil.
  • Add sausage patties in a single layer and air fry for 5 minutes. Flip and cook for 3-4 additional minutes until the internal temperature is at least 160 degrees.
  • Let them cool on a paper towel-lined plate to drain any grease, then enjoy!

Mary’s Tips & Tricks

  • Meal Prep: One pound of meat will yield 6 sausage patties. You can double it for a great meal prep option!
  • Seasoning: You can adjust the seasoning to your liking. If you prefer less spice, simply omit the cayenne pepper. If you like more spice, add a bit more. It’s totally customizable and fun to play around with to make the perfect sausage for your flavor preferences.

  • To freeze, store the fully cooked (and cooled) patties in an airtight, freezer-safe container or bag with layers separated by parchment paper to keep them from sticking. Freeze for up to 3 months.
  • Defrost your frozen sausage patties overnight in the refrigerator and reheat them in the microwave, stovetop, or air fryer.
