Ingredients

  • 1 package sugar free bacon (8-10 pieces)
  • 16-20 pitted dates
  • ½ tub Kite Hill almond milk cream cheese or regular if you tolerate dairy

Instructions

  • Preheat your oven to 425. Line a baking sheet with foil, then place a baking rack on top of it. If you don't have one, its ok. Just use the foil.*
  • Cut each piece of bacon in half. Cut a slit in each of the dates without cutting fully through the center. Use a spoon to fill the inside of the date with a bit of cream cheese. Wrap one bacon half around each date, overlapping the edge and secure it with a toothpick. Repeat this process until all of the bacon has been used. You should have between 16-20 dates total depending on how large your pack of bacon was.
  • Bake them for 10 minutes. Flip each one. Return the pan to the oven for an additional 10 minutes. If the bacon is still not cooked to your liking, you can broil for 2-3 minutes at the end! Let them cool, serve, and enjoy!

Notes

If you do not use a baking rack, you make need to let the cooked bacon wrapped dates drain on a paper towel-lined plate.
