Coconut Cilantro Lime Cauliflower Rice (Whole30)

This Coconut Cilantro Lime Cauliflower Rice is my favorite way to eat cauliflower! It is Whole30, Paleo, and gluten free. It tastes so fresh and pairs perfectly with grilled chicken, steak, or seafood.

Ingredients

Cauliflower Rice

  • 1 tbsp olive oil or avocado oil
  • 16 oz bag frozen cauliflower rice
  • ½ cup coconut cream or thick part of a can of full fat coconut milk
  • ¼ cup finely diced cilantro
  • Juice from 1 lime
  • ½ tsp sea salt plus more to taste

Regular Rice

  • 1 cup uncooked white rice
  • 1 13.5 oz can full fat coconut milk
  • ¼ cup finely diced cilantro
  • Juice from 1 lime
  • ½ tsp sea salt plus more to taste

Instructions

Cauliflower Rice

  • Heat oil in a large skillet over medium heat. Add in the frozen cauliflower rice and saute for 3-4 minutes until it begins to soften. Add in the coconut cream and stir to combine. Cover the pan and let it cook for an additional 3-4 minutes. Stir. If it still seems watery, cover and cook for an additional 1-2 minutes. Stir in cilantro, lime juice, and sea salt. Serve and enjoy!

Regular Rice

  • Combine rice and the can of coconut milk in a sauce pan. Cover and bring it to a boil. Reduce the heat to low and let it simmer (covered) for 12-15 minutes. Fluff the rice with a fork. Stir in the cilantro, lime juice, and salt. Serve and enjoy!
