Ingredients

  • 3 lbs chicken wings separated into flat wingettes/drums
  • 2 tsp aluminum free baking powder not baking soda!
  • 1 tbsp fresh squeezed lemon juice
  • 1.5 tbsp Old Bay seasoning divided, + more for dusting
  • cup ghee melted

Instructions

  • Preheat oven to 425. Line a large baking sheet with parchment paper or foil. If you have a baking rack, this will help the wings get REALLY crispy. If you don't, no worries- you can place them directly on the parchment/foil. 
  • Remove wings from packaging and cut into flat wingettes/drums if not already cut. Pat dry with paper towels and add to a large bowl. Add baking powder and 1/2 tbsp of the Old Bay to the bowl and toss with the wings. 
  • Spread wings out evenly on the baking rack/sheet so they are not touching. Bake for 30 minutes. 
  • Meanwhile, make the sauce. Combine melted ghee with the lemon juice and remaining 1 tbsp of Old Bay. Stir well and set aside. 
  • When the timer goes off, remove the pan from the oven and turn the oven to BROIL. Dip each of the wings in the sauce, then place back on the pan, making sure to flip them to the opposite side that they were originally baking on (so the other side can get crispy, too). 
  • Broil the wings for 4-5 minutes until desired level of crispiness is reached. Remove from the oven and brush with any remaining sauce + sprinkle with another dusting of Old Bay. Serve with some ranch dressing and devour!
