Crisp & Refreshing Lemon Blueberry Mocktail

A crisp, bright, and refreshing Lemon Blueberry Mocktail with homemade blueberry simple syrup, fresh citrus juice, and sparkling water. This quick and easy drink is pretty to look at and perfect to drink on warm weather days!

Ingredients

  • ice
  • 2 oz freshly squeezed lemon juice
  • 2 oz blueberry simple syrup
  • Lemon or lime sparkling water

Blueberry Simple Syrup

  • ½ cup granulated sugar
  • 1 cup water
  • 1 cup blueberries

Instructions

  • First, make the blueberry simple syrup. Combine the coconut sugar, water, and blueberries in a saucepan. Bring the mixture to a boil, then lower the heat and let it simmer for about 10 minutes until thickened.
  • Strain the liquid into a bowl, leaving the blueberries behind. Press down on the blueberries using a spoon to get as much of the juice out of them as you can. Pour the syrup into a mason jar and let it cool. You can save any extra in the fridge for more mocktails (it makes enough for about 6).
  • Next, add some ice to a cocktail shaker along with 2 oz fresh squeezed lemon juice and 2 oz blueberry simple syrup. Shake for 30 seconds.
  • Fill a glass with ice, then pour the lemon blueberry mixture into the cup. Fill it up the rest of the way with the lemon or lime sparkling water. Garnish with more blueberries and a slice of lemon. Enjoy!

Notes

Expert Tips

  • Pitcher: If you'd like to make a pitcher, click the printable recipe and adjust the servings to 6. The blueberry syrup is enough to make 6 drinks, so if you want to make a larger pitcher, double the simple syrup recipe.
  • Sweetness: Adjust the sweetness to taste. I recommend starting with less simple syrup, then adding a little more at a time until reaching your desired sweetness level.

Serving Tips

  • Make a large pitcher, or serve individual drinks.
  • Fill a glass with ice, then pour the lemon-blueberry mixture into the cup. Fill it up the rest of the way with lemon or lime sparkling water.
  • Give it a gentle stir, then garnish with more blueberries and a lemon wedge or slice. Enjoy!

Storage Tips

  • If you have leftover blueberry syrup, store it in an airtight container or mason jar with a lid for up to a week. 
  • Use the the blueberry syrup for another mocktail, or you can use it to flavor and sweeten iced tea or coffee!
