Equipment

Ingredients

  • 3-4 lbs pork loin, chops, or shoulder cut into 4 pieces
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 2 tsp dijon mustard
  • 1 tbsp coconut aminos
  • ¼ cup apple cider vinegar
  • ¼ cup chicken broth
  • ½ cup apple juice or apple cider look for no sugar added
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tbsp paprika
  • 1 tsp red pepper flakes

Instructions

  • Place onions in the bottom of the Instant Pot (or slow cooker). Place pork on top of the onions. Whisk remaining ingredients together and pour over the pork. 
  • Set your Instant Pot to "manual" 55 mins on high pressure. Let it slow release for about 10-15 minutes, then release the steam. (If using a slow cooker, set on low for 7-8 hours.) 
  • Shred the pork using 2 forks. If there is too much juice, hit the "saute" button and let it simmer until some cooks off. Enjoy!

Notes

You can also make this in the slow cooker. Place the pork into the slow cooker and pour the mixed sauce ingredients over top. Cook on high for 3-4 hours or low for 8-10 hours, then shred using 2 forks!
