I could eat Mexican food every single day and it would never get old. If you’re looking for easy chicken fajita recipes, look no further! This is one dinner that I can make and it will be a hit with the kiddos, too. Yay for not having to cook multiple meals! These low carb chicken fajitas are the easiest, one-pan dish you can make. The homemade Keto fajita mix is a much healthier alternative to the additive-filled packets! This recipe is also perfect for making fajitas for a crowd.

Ingredients for Easy Sheet Pan Keto Fajitas

- Avocado oil (I like to use this because of the high heat point, but regular olive oil works, too!)
- red bell pepper
- orange bell pepper
- green bell pepper
- medium onion
- 1.5 lbs chicken breasts – I love to get organic chicken breasts from Butcher Box!
The best part is the Easy Homemade Paleo Fajita Seasoning Mix! Many of the seasoning packets you find in stores have gluten, MSG, and lots of additives. This is an easy and cost-effective alternative! You can triple the amounts used in this recipe and store the extra seasoning mix for future use. Here is what you need:
- Cumin
- Chili powder
- Garlic powder
- Paprika
- Oregano
- Salt
- Red pepper flakes
This mixture also makes a great homemade taco seasoning!
How to make One Pan Fajitas:
Making fajitas in the oven has never been easily. No stovetop splattering or mess to clean up!
Preheat your oven to 400 degrees. Slice the peppers, onions, and chicken into thin strips (about 1/4-1/2 inch wide). Make sure the chicken pieces are of even thickness to prevent uneven cooking. This also helps them to crisp up. When everything is piled on top of each other, they end up steaming instead of baking. Spacing everything out as much as possible is key!
Put the peppers and chicken strips into a a large bowl and add the avocado oil and spices. Mix it all together and spread it out evenly on a parchment-lined baking sheet.
Bake for 25-30 minutes until everything is cooked through and beginning to brown.
How To Serve Paleo Fajitas
For gluten free, serve in corn tortillas. For paleo, use grain free tortillas or to make this Whole30 friendly, serve on a salad/in a bowl with cauliflower rice, avocado, salsa, and dairy free ranch! The options are endless when it comes to putting together your own healthy fajita bowl.

Can you freeze chicken fajitas? Sure can! To freeze, place the chicken, veggie, & spice/oil mixture into a gallon freezer bag. Seal the ziplock bag, squeezing out as much of the air as you can as you do so. The day before you’d like to cook the fajitas, move the bag to the fridge to thaw.

Hi – There is no recipe! I just add chopped avocado and salsa verde from Trader Joe’s.
If you add shrimp, do you cook them all together? Or do you cook the shrimp for a shorter time?
I would remove the shrimp after 10 mins so they don’t get overcooked! 🙂 Then continue cooking everything else.
