This colorful salad has a lot of moving parts that can be made ahead of time and stored in the fridge, so once it’s time to eat, it can be thrown together in less than 5 minutes! The combination of spicy baby arugula, thyme roasted beets, sweet & spicy maple/cayenne roasted pecans, almond milk cheese, and sweet pears is unbelievable!

You can use any dressing you would like, but this homemade maple dijon vinaigrette is a great addition to all of the flavors in this dish. Feel free to add a protein like salmon or grilled chicken, or just have a plant-based meal with the salad on it’s own. You really can’t go wrong with this one 🙂

 

For the cheese, I use this Kite Hill Foods brand almond milk cream cheese and crumble it over the salad. You are welcome to use any cheese you like if you tolerate dairy products. Goat cheese would be great on this!

Roasted Beet & Arugula Salad with Maple Dijon Vinaigrette

Ingredients

Roasted Beets

  • 1 package organic beets*
  • 1 tsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp sea salt

Maple Cayenne Roasted Pecans

  • 1/2 cup raw unsalted pecans
  • 2-3 tsp maple syrup
  • 1/2 tsp sea salt
  • 1/4 tsp cayenne pepper

Remaining salad ingredients

  • 1 package organic baby or regular arugula
  • 1 pear, sliced
  • 1/4 package Kite Hill Foods cream cheese (crumbled), or any cheese of choice, goat would work well!

Maple Dijon Vinaigrette

  • 1/3 cup olive oil
  • 1/3 cup white wine vinegar
  • 1 tsp garlic powder
  • 1 tbsp maple syrup
  • 1 tbsp dijon mustard**

Instructions
 

Beets

  • Preheat oven to 400. Peel the skin off the beets using a peeler or a knife and cut beets into 1 inch chunks.
  • Place on a parchment-lined baking sheet and toss with the olive oil, thyme, and salt. Bake for 40 minutes, flipping the beets halfway through.

Roasted Pecans

  • Preheat oven to 350. Toss pecans with maple syrup, salt, and cayenne. Lay out on a foil-lined baking sheet and bake for 15 minutes, tossing halfway through. These make an awesome snack, too!

Maple Dijon Vinaigrette

  • Add all dressing ingredients in a bowl and whisk to combine. This can be stored in the fridge for up to 2 weeks.

Salad

  • Add all salad ingredients to a dish and make them look pretty, then top with the dressing 🙂 Add a protein if desired, but this salad is pretty fantastic without any meat or fish added! Enjoy!

*I get them from Trader Joe's and it comes with about 3-4 in a pack. Feel free to buy them individually.
** Check your labels if you need it to be whole30 compliant! Annie's Homegrown is my fave.
