I can’t even believe that Christmas is 11 days away! I feel like this month has flown by already and I am definitely not ready. I’m trying to plan out all of our meals since we will be hosting twice over the holidays. This Orange Cranberry Overnight French Toast Casserole will definitely be making an appearance on Christmas morning. It is so easy to prepare the night before and stick into the fridge before you go to bed. When you wake up on Christmas morning, simply add the pecans on top and pop it into the oven!

Orange + Cranberry is probably one of my favorite flavor combinations in the world. I love the tartness from the cranberries and the citrus from the orange zest combined with the sweetness from the coconut sugar and cinnamon. Pour some pure maple syrup on top, and you’ll be in heaven!

What kind of bread should I use?

This is completely up to you. I decided to make this casserole gluten and dairy free, but you can certainly use regular French bread or sourdough if you are able to have gluten. I used one loaf of Canyon Bakehouse Country White bread for this recipe It is my preferred bread brand because it is free of gluten, dairy, and soy. There are other brands out there (I know Udi’s has a gluten free baguette that would work!), so use whatever you can find. The key is to toast it lightly in a 350 degree oven first to dry it out a bit.

Can I make this nut free?

Yes, you sure can. You can use coconut milk instead of almond milk and omit the pecans. It will still work out great!

In terms of milks, I used Califia Farms unsweetened Vanilla almond milk in this recipe. For coconut milk, I prefer Native Forest brand.

Not a fan of orange or cranberries? You’re in luck, because this casserole is totally customizable. You can add or omit whatever fruit/nuts you want. Some other ideas:

  • Blueberries, strawberries, or raspberries
  • Add some cream cheese (regular or dairy free)
  • Nutella and banana (not dairy free, but delicious!)
  • Cinnamon apple

Ingredients

  • 1 18 oz loaf of gluten free bread , I like Canyon Bakehouse Country White bread
  • ¼ cup coconut sugar
  • 1 tsp cinnamon
  • ½ cup fresh or frozen cranberries
  • 6 large eggs
  • 2 cups unsweeteneed almond milk, can sub coconut milk
  • 1 tsp vanilla extract
  • zest from 1 orange, approximately 1 tablespoon
  • ½ tsp nutmeg
  • cup chopped pecans, optional

Instructions
 

  • Preheat oven to 350. Cut bread into 1 inch chunks. Spread out on a baking sheet and toast for 10 minutes.
  • Spray a 9x13 in casserole dish with cooking spray of choice. Spread half of the bread chunks over the bottom of the dish. Mix the coconut sugar and cinnamon together, and sprinkle half over the bread chunks. Add 1/2 of the cranberries on top of the bread and sugar/cinnamon. Add remaining bread chunks on top.
  • Whisk eggs together in a large bowl. Add in almond milk, vanilla, orange zest, and nutmeg and stir to combine. Pour the mixture over the entire casserole, making sure to cover as many bread chunks as possible. Sprinkle the remaining sugar/cinnamon and cranberries on top. Cover tightly and place in the refrigerator overnight.
  • When ready to bake, preheat the oven to 400. Sprinkle chopped pecans on top, if desired. Bake for 35 minutes or until the egg mixture has set. Keep an eye on it - if the casserole starts to get too brown, cover it with foil for the remaining baking time. Serve with maple syrup. Enjoy!
