This Coconut Cilantro Lime Cauliflower Rice is my favorite way to eat cauliflower! It tastes so fresh and pairs perfectly with grilled chicken, steak, or seafood. It’s also gluten free, paleo, and Whole30 friendly! I’ve included a recipe for regular rice, as well.

Coconut Cilantro Lime Rice

Coconut Cilantro Lime anything is my love language! I used to actually hate cilantro (I thought it tasted like soap LOL), but now I love it. Funny how our tastes can change over time! This Coconut Cilantro Lime Cauliflower Rice & Regular Rice are one of my favorite sides. We usually switch it up…if I am looking to keep things lower carb and Whole30 we use caulirice, and sometimes I like the real thing.

Either way, both of these pair so well with my Whole30 Chicken Tikka Masala, Whole30 Coconut Thai Turkey Meatballs, Beef & Pineapple Kabobs, and Lemon Dill Grilled Shrimp among many others!

What Ingredients Do I need to Make this Coconut Cilantro Lime Cauliflower Rice?

  • Cauliflower Rice – I like to get the pack of 5 – 16 oz frozen bags at Costco!
  • Regular Rice (If using) – You can use regular white rice, jasmine rice, basmati, etc.
  • Coconut Milk – It’s important to use full fat coconut milk. I like to use Thai Kitchen brand.
  • Cilantro
  • Limes

That’s it! Super simple. I like to double the recipe to make enough for my family of 5.

Ingredients

Cauliflower Rice

  • 1 tbsp olive oil or avocado oil
  • 16 oz bag frozen cauliflower rice
  • ½ cup coconut cream, or thick part of a can of full fat coconut milk
  • ¼ cup finely diced cilantro
  • Juice from 1 lime
  • ½ tsp sea salt, plus more to taste

Regular Rice

  • 1 cup uncooked white rice
  • 1 13.5 oz can full fat coconut milk
  • ¼ cup finely diced cilantro
  • Juice from 1 lime
  • ½ tsp sea salt, plus more to taste

Instructions
 

Cauliflower Rice

  • Heat oil in a large skillet over medium heat. Add in the frozen cauliflower rice and saute for 3-4 minutes until it begins to soften. Add in the coconut cream and stir to combine. Cover the pan and let it cook for an additional 3-4 minutes. Stir. If it still seems watery, cover and cook for an additional 1-2 minutes. Stir in cilantro, lime juice, and sea salt. Serve and enjoy!

Regular Rice

  • Combine rice and the can of coconut milk in a sauce pan. Cover and bring it to a boil. Reduce the heat to low and let it simmer (covered) for 12-15 minutes. Fluff the rice with a fork. Stir in the cilantro, lime juice, and salt. Serve and enjoy!
